Got a call from ATLANTA for a super last minute coconut cake with coconut icing! I had less than 24 hours to get it together and I was able to pull it off for her 65 year old cousin and Eagles fan! It’s a taste of the islands with this Pineapple Coconut Tiered Cake! The Bday boy is from Puerto Rico so the customer and I discussed something that would remind him of the fresh fruit from home! Juicy, fresh pineapple was brought to high heat on the stovetop, then reduced and chilled to make the most incredible filling in between succulent layers of coconut cake! I offset the sweetness with cream cheese frosting. Then topped it with oven toasted coconut and dried pineapple for some added crunch and fun!
