In 2020 the world had just shut down. We were losing loved ones everyday, people were losing their jobs, basic household necessities were extremely hard to get, our favorite restaurants and bakeries were closed. There were a lot of people who were sad, worried, and scared. It really hit me hard and made me want to do something to make people feel less worried and scared.
In March I started baking vegan banana bread and brought them to my neighbors, my friends, the airman at Lackland, and some of the people at VA when I would take my father to his appointments. Im not a very emotional person so this was my way to show people that I cared, that they are not alone, that everything will be okay. Over a short period of time I started getting a bit of a following to a point where people wanted to buy my treats. At the End of March 2020 Happi Bae Bakery LLC was born.
I have spent the last 4 1/2 years serving my community, schools, coffee trucks, meat markets, etc and I loved every moment of it! I even started to expand to the greater San Antonio area and over time I reached other cities and towns like Cobilo, New Braunfels, Devine, Beorne, even as far as San Angelo!
I have been so blessed to share my cultures through food with all of you! Thank you for trying new things, thank you for letting me into your lives and treating me like I was apart of you beautiful families, thank you for cheering me on and telling me to never give up when my father passed away or when my health was not the greatest. I will never forget this chapter of my life and how it has changed me for the better.
Thank you again for the love and support you have shown me over the last 4 1/2 years! I will truly miss every single one of you.
