A few updates:

1. There has been a silver lining to our hiatus, and it was having the bandwidth to develop this product—a kolache box mix. There’s nothing like it on the market, but is that a good sign? 🤔 Grateful for the chance to see this bucket list item to fruition, SA.

2. We *are* popping up to sell kolaches in this production kitchen. It is just taking 3 times longer to reopen than I expected. For example, finally getting internet installed and painting a new, homemade (hot!) pastry case, this week…

There’s a Kolache Renaissance afoot (…a Kolache-ssance?)

Two tidbits from the Tex-Czech stratosphere—Shipley’s has expanded from sausage into egg+ klobasneks…aiming to be another Kolache Factory. And—Village Bakery in the town of West is set to reopen, after permanently closing ~ 5 years ago. They created, and coined the word, klobasnek.

🎤Last year I told the story of how my career morphed from academic researcher to bakery owner.

The topic is ‘your passion,’ and I touched on a few of mine, including: scientific innovation, and healing in the place where you’re broken.

It had taken 11 years to figure out how to fix myself. I’m not a professional, but I wanted to help someone else get there faster, if possible.

The solution wasn’t expensive or painful. It was merely uncomfortable—pinning my subconscious down, logically examining what I was afraid of.

I visited friends in Houston this weekend, and on the drive home I took the opportunity to pop into one of the kolache institutions on the Czech belt. One of the big names. —Awesome dough. But the fillings?

Sorry, San Antonio. You’re not done with Bexar Kolaches yet. There’s room—like, a whole state’s worth, actually—for kolaches made with real fruit fillings. Not canned; not artificial.

Our values make us who we are, and we value the real thing. I didn’t intend for it to differentiate us; it just does. Because damn, if real fruit doesn’t make them taste

See you in the coming weeks, SA. Thank you to all who emailed and messaged me, letting me know our absence was noticed. I enjoyed (relished, if I’m honest) our hiatus, but it is coming to a close. I’ve spent my break doing all kinds of things—ridiculous things, like making this flag—and exciting things, like developing new a product that hasn’t existed before. I can’t wait to see you again—I have missed you. More soon.

Bexar Kolaches turns 3 today—so it is poignant to share that we’ll be moving out of our location at the end of December. To be clear—my landlord is a good dude & a great landlord; we just couldn’t reach an agreement.

Swipe for pics of our first Xmas here, 2 years ago. The final 2 pics are from our Dec 8, 2020 launch: my 2 saintly parents, baking alongside me at Alamo Kitchens to prep deliveries, & then later the market at Folklores Coffee house.

We’ll be back soon, As I told the audience: my goal was to breathe life into SA’s historic buildings by filling a cultural gap in our food scene. I’ve now done it in 2 locations. Where will I renovate next?

Why I didn’t take a single photo with himself—I don’t know. 🤦🏻‍♀️We sampled some kolaches and you get a sneak peak inside our noisy commercial kitchen!! 😝

This was a milestone for me, since they only go to the most delicious places. Watch it today, then come celebrate with us in the bakery all week long.😊

We’re learning how to make this Czech favorite, so let us practice on you! Free Turkish coffee this week. Until you can get taste it, here are some pics of my trip to the Turkish Mediterranean coast—Izmir and then some—plus a quick trip over to the underground city of in 2017. (Olive trees grow on the beach there, y’all!) Last pic is of my own legit Turkish coffee.

Looking for culture this weekend? Look no further 👀

Also, can I break some 🚨news🚨—
Bexar County sent an entrant to the Texas state competition for Miss Czech-Slovak (in West, of course) for the first time this year. She won.

Our Bexar County entrant competed nationally for Miss Czech-Slovak US in August—and she won.

Come wish Destiny Hollingsworth congratulations at the Harvest Festival on Saturday. Bexar County couldn’t be more proud of this intelligent, kind young woman. 💗

This is what San Antonio jobs look like. It’s not sexy, but we put our dollars where our values are—and we value jobs.

Our sausages come from local sausage maker . I’ve worked with 2 different folks in the past year who have been let go from there. I, myself, was let go from my day job this summer, and 8 of my teammates got let go this week.

It is real, and it is insanely stressful. I am proud to have supported this local (albeit Polish 😂) company from the start. Our kolaches support San Antonio jobs, pure and simple.
