We believe—in next season. Thank you, Spurs, for getting farther than we ever expected this year! —And come see us, San Anto, for our new Czech inspired flavors (like this ‘Czech chicken’ with spicy red pepper paste, housemade farmer’s cheese, and pickle). We’ve still got Floresville blackberries going, too.

We’ll be expanding into weekdays soon, but for now catch us when you can! Sat & Sun, 7a-noon, 1702 W Kings Hwy ❤️

‘Every disadvantage has its advantage’ —a Dutch soccer philosophy from Ted Lasso that’s stuck with me.

I am a professional anthropologist. My back-of-house restaurant experience, prior to Bexar Kolaches, was washing dishes at Whole Foods in Boca Raton…pictured on the bulletin board. —They let me chop potatoes one day, but when I forgot to remove the ‘eyes’ they put me back on dish duty. Ha.

So I come by my wisdom the hard way: through instinct, mistakes, and a relentless commitment to improving. I have learning curves—bumpy start after 2 years closed—that lifers don’t.

The upside to being self-taught, however, is that I bring different skills to the table. Academia taught me how to push knowledge forward, if not textures and flavors. (Though have I told you about the texture of maggots boiled in preserved breadfruit? Field work, amiright? 🤷🏻‍♀️) Academia taught me how to cultivate a point of view, and to identify meaningful gaps within a discipline. So Bexar Kolaches will push American kolache culture forward, and you, San Antonio, have a front row seat.

This Saturday, from 11-1, we’ll host a Happy-To-Be-Back Hang. Come sample our new cultural contributions. It’s not a Grand Opening, because we haven’t perfected things yet, and because we’re about to close for two weeks while I return to the Czech Republic for research, ha 🤦🏻‍♀️

I can’t decide how to caption this, except to say: nothing tastes better than local produce 💯🤷🏻‍♀️ Had the best blackberries of my life yesterday, picking these in Floresville.

San Antonio, let’s goooooooooooo!!!

See you this Saturday and Sunday, from 7am - noon, at 1702 W Kings Hwy. Klobasneks and kolaches—familiar favorites and some new ones I’ve been working on. We’ve partnered with a blackberry farm in Floresville, so come try some fresh, local fruit kolaches while the getting is ripe.

Gonna be a good summer, San Antonio.

A few updates:

1. There has been a silver lining to our hiatus, and it was having the bandwidth to develop this product—a kolache box mix. There’s nothing like it on the market, but is that a good sign? 🤔 Grateful for the chance to see this bucket list item to fruition, SA.

2. We *are* popping up to sell kolaches in this production kitchen. It is just taking 3 times longer to reopen than I expected. For example, finally getting internet installed and painting a new, homemade (hot!) pastry case, this week…

There’s a Kolache Renaissance afoot (…a Kolache-ssance?)

Two tidbits from the Tex-Czech stratosphere—Shipley’s has expanded from sausage into egg+ klobasneks…aiming to be another Kolache Factory. And—Village Bakery in the town of West is set to reopen, after permanently closing ~ 5 years ago. They created, and coined the word, klobasnek.

🎤Last year I told the story of how my career morphed from academic researcher to bakery owner.

The topic is ‘your passion,’ and I touched on a few of mine, including: scientific innovation, and healing in the place where you’re broken.

It had taken 11 years to figure out how to fix myself. I’m not a professional, but I wanted to help someone else get there faster, if possible.

The solution wasn’t expensive or painful. It was merely uncomfortable—pinning my subconscious down, logically examining what I was afraid of.
