Beautifully Blistered Bagel!

Fun Fact: Blisters occur on the outside of the bagel because gas becomes trapped under the surface during the cold fermentation stage of our dough. Then, boiling the dough causes the crust to remain flexible a bit longer while they're in the oven - allowing the blisters to form. We find these ideal, as they really enhance the flavor and texture of the crust!

Let's talk about these herbed beet and chevre bialys!
Bialys are chewy rolls with a dimple and are filled. They are similar to bagels but are not boiled. We ferment our dough overnight with a sourdough culture, which gives it a distinct flavor and a delicious chew! Add roasted beets and chevre, and you've got a masterpiece 👌
