I mean… if I made myself one of the (vegan) pumpkin cakes, I just HAD to do the same with the (vegan) gluten-free* Chai spice cake, right? 😉

For my own cake, I added salted caramel between layers on one half. I will make that change for VegFest 2027! I think I’m going to try making a gingerbread caramel sauce and see which one I prefer—regular salted caramel or gingerbread caramel.

Today, to celebrate another successful VegFest, I made myself one of the pumpkin cakes with tahini buttercream & peppered pecans. (Yes, I still want to make it pretty even when it’s just for me—ha!)

I don’t know if anything will ever beat the pistachio cake, but I really love this cake and buttercream combo!

A heartfelt thanks to everyone who came to VegFest yesterday! It was another wonderful event!

Last year, I sold out by 2:30, so this year I baked A LOT more. Still sold out by 3:00. You all really showed up! I’m already planning for next year, and I’ve got some new things I want to try.
