My last week of High Volume Production at the culinary of America has come to an end. I can’t believe there are only three weeks left in the semester. I’m moving on to my à la cart class but enjoy a little photo dump of some of the dishes we got to serve in the dining hall!

Week 9 of culinary fundamentals The Culinary Institute of America

Tuesday we worked on cooking grains! We made a classic rice pilaf and a Parmesan risotto! We also made veggies in a fondue sauce. 🥕🍚🧀

Today we made pasta! We made two shapes (I picked fettuccine & ravioli) and we stuffed them with a farmers cheese we made in class. We also got to make any sauce of our choosing! I made a white wine lemon butter fondue sauce. 🧈🧀🧈🧀
