Want perfect Icing EVERYTIME......it is possible, but takes practice. So many things go into making your royal icing perfect: 1) Ingredients (obviously) but also methodology, hand mixing vs mixer; warm water vs cold; meringue powder vs egg whites; sifted sugar vs not; measuring vs weighed ingredients. 2) Consistency- "Perfect" icing changes meaning depending on your purpose- flooding, outlining, details, flowers. 3) Mixing time (don't undermix and dont overmix-there are exceptions to each of these though). 4) Other things such as: humidity, altitude, water hardness, batch size, additives (food coloring, flavors, etc), cookies, age of icing (fresh vs day old).....More to come on this !
