What does California taste like in one little bite? 🌿
That’s the question I started with when I was invited to create a bite for the California Grand Tasting.
My answer: It started with a beautiful batch of California figs and became a
Brown Butter Fig & Honey Financier.
A delicate French almond cake made with nutty brown butter (a signature Beasley & Sons ingredient) topped with California-grown fig confit, drizzled with honey from Bee Z BeeS Farm in Lincoln, and finished with edible florals from BASK Farm in Galt.
French technique. California ingredients. And a little Beasley & Sons magic. ✨
This week, my kitchen is all about turning that idea into 750 individual bites for Friday night.
And THIS is the part I wish people could see more often.
The testing. The sourcing. The trays. The tiny details. The organized chaos. And that moment when an idea that started in my head becomes something hundreds of people get to experience.
As a chef and small business owner, being able to represent Beasley & Sons Bakery alongside California's premier (and talented!) food and wine community is pretty special.
