Dinner at a Glance! I wasn't very productive during week night dinners this week. However, I did cook something good!
Power Bowl ~ I cook power bowls a lot in the summer. It's easy to put together, pick a protein, your preferred carbs and lots of veggies, and you got a bowl of healthy goodness! I love roasted salmon, edamame, avocadoes, and lots of mixed veggies or greens over brown & red rice. Simply delicious!
Rabokki ~ Ramyeon + Tteokbokki. Yes to this invention! It's actually simply Korean instant noodles with rice cakes, fish cakes, gyozas, and veggies enjoyed together in a pot of broth. You can cook it first or enjoy it as a hot pot dish, comfort food for me!
Sesame Ginger Chicken ~ A nostalgic stir fry that I had been enjoying since my childhood days. Slices of chicken (or pork if you like) stir fried with lots of ginger & sesame oil, seasoned with dark soy sauce for that umami taste. Then add in water to create a sauce. I like to top it with fried eggs. Simply the sauce and eggs over rice is to die for 😂
Broccolini Mushrooms Stir Fry ~ I like simple food just Iike that. A veggie and mixed mushrooms stir fried with garlic and mushroom sauce, easy dish to serve within minutes. Healthy dish without compromising on the taste!
