Flavor Profile: Strong and rich with a slightly smokey, earthy, and nutty delivery with pronounced body and a lingering finish.
Story behind the producers:
From the mountains of Caparaó in Minas Gerais, where the slopes are steep enough that coffee still comes off the hillsides by hand; harvested in phases where only the ripest cherries are collected. Avocado trees grow among the coffee, increasing biodiversity while the shade slows the ripening process, allowing more sugar to be carried into the cherry. This Natural Process coffee is dried whole on the farmās own terraces, allowing for more control over the final product while giving the coffee time to develop a rich flavor profile. The farmās total footprint is 66 hectares, more than half of which is intentionally unmanaged in order to conserve biodiversity.
What we love most:
The farm is part of Diamante Fazendas, a Minas Gerais agricultural group whose work reaches well past its own fences with an agricultural training arm that delivers technical instruction to growers across a network spanning dozens of municipalities in the region. Soil and water management, harvest and post-harvest practice, and quality evaluation are at the core of the curriculum that aims to empower local growers to produce specialty-grade coffee in a sustainable way. In a region where most coffee comes from small family properties, this transfer of knowledge has played a large role in Caparaóās transformation from a commodity zone to a specialty one over the last twenty years.
