🥧 it’s so sad that there isn’t a lime emoji! Here’s something cute and delicious I made today.
My boyfriend has been asking me for a key lime pie so today was the day I gave it a shot. 💚
The crust is homemade with graham crackers and macadamia nuts. The filling is simple with key limes, sweetened condensed milk and eggs. Topped with my homemade whipped cream, grated limes, and little lime wedges to accent (thank you to my boyfriend for his 🔪 skills) 💚
We finally stepped out of our house and decided to visit the bookstore here in Austin 📚 I picked up 🪄
My boyfriend asked me to make the “Lemon Sponge from the Southern Cities” recipe. The conversion is a little weird so if you happen to grab this cookbook, reference the last page for guidance or have Google ready. I also suggest you alter the lemon “syrup”. I think they meant it to be a type of glaze. The recipe calls to juice 3 lemons but that was way too much. They also ask you p*e and slice lemon p*els into the batter. We decided to do grated lemons instead. Since you’d need at least 2 for that process then I would only juice 1-2 lemons if I were to do this again. The recipe also calls for these to bake for 1 hour and didn’t give any guidance on what type of pan(s) to use. So I used jumbo muffin pans and suggest you bake them for about 25 minutes instead.
They baked with a nice golden crust and were very soft and sponge like lol 🍓🍋 I ate mine with a fresh strawberry but my boyfriend enjoyed them as just the plain sponge opted to dip it into the glaze instead. Perfect Sunday afternoon snack for this rainy day 🌧

Since I was playing with chocolate yesterday, I thought, “what better time to try these out?”
These hot cocoa bombs are filled with freshly grated chocolate, marshmallows, and white chocolate and then topped with a little fondant snowflake, chocolate shavings and white sugar crystals. Working on a few combinations and flavors and will be posting some for Christmas! 🎄
