Happy Mother's Day to all the moms, no matter if you are a biological, step, adoptive, or surrogate mom, or someone that is waiting for your time to be a mom, or someone that has not been fortunate to become a mom. Also to all the aunties and cousins and grandma's that are part of our villages and give us and our kids love, support and friendship. Today is not a day of celebration for everyone, but may it be a day of some joy and peace to us all, no matter out motherhood status or journey.
Remember that pineapple cake recipe I tested a several weeks ago? After tasting it, I decided a salted caramel would make a better filling than the pineapple curd and pineapple jam fillings I had tested out.
So, today I present the pineapple layer cake, filled with salted pineapple caramel, covered in vanilla bean cream cheese buttercream, decorated with a bit of the caramel on top, pineapple flowers and a gold painted rough edge.
Many years ago, my mom made a pina colada cake for my birthday. That was the inspiration for this cake, as I remember liking the pineapple flavor of the cake and wished there was a pineapple cake other than the upside down version. My mom used a white cake mix with pineapple juice in lieu of the water the mix called for. I opted to create a scratch made version, using crushed pineapple with the juice and more juice in the caramel. It felt like a perfect Mother's Day tribute to my mom. π©·
