I baked 🌈 Rainbow Spinkle 🌈 cookies to celebrate Pride month!

I know, I know... I'm a day late! But in my defense, I ran out of time to bake this weekend and today was my first chance to get back into the kitchen. This is why I'm not a content creator: always a day late and a dollar short! 🀣

Nick was sad I didn't sneak him a slice of coffee cake, so I made him his own small cake. 😊

This is a half batch of Ina Garten's Sour Cream Coffee Cake. I've always used pecans, instead of walnuts, and doubled the streusel. Ina updated the recipe in 2025 to use pecans and include more streusel, so if you look it up, you should find the same version I make.

My neighbors are celebrating their daughter's graduation today. She wanted to have a brunch themed party (how fun!) and asked for coffee cake for the dessert table. We also opted to make some blueberry and lemon bread, to go along with the coffee cake (half with pecans and half without). It was my honor to bake for her and hopefully she and all her guests have a wonderful day!

Yesterday was fun for me. It's been awhile since I've had a reason to make coffee cake. Some of you know the reason I rented a kitchen and got a food handlers license, instead of just staying an in-home Cottage Food Producer, was to supply a church coffee shop with baked goods. Each week I'd make a different bundt cake, including this coffee cake recipe, as well whatever else I whipped up (usually a bar or brownie, a cookie and a cupcake or tart). After covid, the coffee shop never resumed ordering and as much as I love coffee cake, I cannot eat one by myself, so I don't make them much anymore.

I've been making sandwich bread every 2 weeks for a few months now. This week, instead of having toast with his breakfast, Nick asked for dinner rolls. So dinner rolls it is!

Soft, fluffy and richer than sandwich bread thanks to the addition of milk, butter and egg in the dough.

I tried one while they were still warm and yeah, I could never live a Keto or low carb life. Kudos to those of you that do!

Happy Mother's Day to all the moms, no matter if you are a biological, step, adoptive, or surrogate mom, or someone that is waiting for your time to be a mom, or someone that has not been fortunate to become a mom. Also to all the aunties and cousins and grandma's that are part of our villages and give us and our kids love, support and friendship. Today is not a day of celebration for everyone, but may it be a day of some joy and peace to us all, no matter out motherhood status or journey.

Remember that pineapple cake recipe I tested a several weeks ago? After tasting it, I decided a salted caramel would make a better filling than the pineapple curd and pineapple jam fillings I had tested out.

So, today I present the pineapple layer cake, filled with salted pineapple caramel, covered in vanilla bean cream cheese buttercream, decorated with a bit of the caramel on top, pineapple flowers and a gold painted rough edge.

Many years ago, my mom made a pina colada cake for my birthday. That was the inspiration for this cake, as I remember liking the pineapple flavor of the cake and wished there was a pineapple cake other than the upside down version. My mom used a white cake mix with pineapple juice in lieu of the water the mix called for. I opted to create a scratch made version, using crushed pineapple with the juice and more juice in the caramel. It felt like a perfect Mother's Day tribute to my mom. 🩷

I'm ending the weekend with an attempt at a new to me recipe: herbed pull apart loaf.

The flavor is good, but I should have covered it sooner, as the top got a bit dark and dry before the center was baked through. I added some melted butter to the top when it finished baking, which helped.

It was fun to try a new yeast dough recipe. 😊

We had a few slices of homemade bread that were pretty stale, and I can't bring myself to throw away something homemade, so french toast for brunch it is! I added some vanilla bean to real maple syrup and gently heated it up before pouring it over the toast.

I also made bacon and some French scrambled eggs (soft scrambled with dairy and salt, cooked over low heat).

Another cupboard clean out bake: chocolate chip cookies, made with a mix of open bags of various chocolate chips and the last of my homemade vanilla bean paste made with dark rum.

If you like soft cookies, you'd love these! I used a lot of the vanilla bean paste and the rum causes baked goods to bake a bit differently. So even after adding an extra couple of minutes to the bake time, these are still so soft that they want to break in half when you pick them up. I should have used a smaller cookie scoop, but I love a big cookie and couldn't help myself!
