Headline: "No ragrets—not even a single letter." 😉

It has been an absolute slog getting to this point, but seeing our bakery cases packed to the brim this morning brought the biggest smiles back to our faces! Every single long night and exhausting baking day leading up to this moment has been completely worth it.
Honestly, the best part of our first day open again has been seeing all of your wonderful faces. We’ve missed you so much!
If you haven’t stopped by yet, come on down and say g’day! The feedback is already rolling in, and the brand-new Kiwi Swirl has been receiving rave reviews today. You definitely don't want to miss out on trying one.

🇦🇺 WE’RE FINALLY REOPENING! 🇦🇺

Seven months away was a little longer than the two or three we had planned… but tomorrow, the doors at Reds Rolls are opening again! ❤️

Our reopening hours:
🥐 Thursday & Friday: 11am–6pm
🥐 Saturday: 9am–5pm

It’s been a while since we’ve made some of our favourites, and we’re getting back into the swing of things. Our ANZAC biscuits could currently qualify as frisbees, so if the baking comeback fails, we may have a future in sporting goods. 😂

The new POS system has also lived right up to its acronym. We made the switch because we were tired of the never-ending struggles with our old system and not being able to give our customers the rewards you deserve. You’ve supported us, and rewarding that loyalty shouldn’t require a wrestling match with a computer!

Setting up the new system and loading the menu took far longer than expected, which means we didn’t get to the cinnamon rolls for tomorrow. They’ll be ready for Saturday morning—and we’re looking forward to them as much as you are!

Our new Kiwi Swirl machine is installed too! We still need to test it and learn its ways before we start serving, so bear with us while we tackle that learning curve. Apparently plugging it in and looking excited isn’t the whole process. 🍦 who knew?

We’ve forgone sleep and food to get everything ready—which is especially ridiculous when you’re surrounded by food and spend all day baking. If we look a little tired, we are. If we forget our own names, they’re Brett and Shae. Please remind us. ☕😂

Seven months later… we’re finally firing up the ovens again! 🇦🇺

What we thought would be a two-to-three-month closure turned into seven months—far longer than we ever expected. We’ve missed seeing you, sharing a chat, and serving up your favourites.

We’re opening for a special few days this week—see the hours below. Thank you to everyone who has checked in, supported us, and patiently waited. It means a lot to the both of us.

We’re back… for three days! (and we’ve got something new)
After 7 long months closed, Reds Rolls is reopening for a short trial next week while we see how Shae’s ankle holds up.
Special hours:
• Thursday 15th & Friday 16th: 11am – 6pm
• Saturday 17th: 9am – 5pm
We’ve been desperate to open the doors again but had to wait for the healing. It’s still not perfect, but we’re giving these three days a go.
And yes… the “machine” has finally arrived.
We’re installing the Kiwi Swirl right now — proper New Zealand-style soft-serve ice cream, made fresh with real fruit. Think thick, creamy, swirled soft-serve that goes perfectly with our sausage rolls and pastries.
We’ve missed you.

We’re almost BACK 🔥
Very soon we will reopen on a Thursday, Friday and Saturday — soft reopening to ease back in and see how the ankle goes.
But tonight at the Roselle Cruise night: our brand new Beef Sausage Rolls, make their debut.
We love the OG, but lately we have had requests for Beef… so we made a proper beef version just for you.
(Fair warning: the beef shrank a bit more than expected, so some further recipe tweaks are needed, We’re still working out the perfect ratio 😅) but we still think they’re good.

As you can see below…. I took the time to carefully measure my sausage before the cook 📏😉

In other news, our Machine arrives next week,
New NZ ice cream dropping soon — separate post coming for that.

G’day Roselle and the Roselle Cruise Night crew!
We’re stoked to be rolling out with the Roach Coach again and can’t wait to see everyone tonight.

Nothing pairs better with a good cruise than a proper sausage roll. Science hasn’t proven it yet, but 60% of the time…. It works every time. 😏

We’re set up and ready at Jackson Park (1686 E Hayes Dr, Chicago) for the Chicago Swans’ full day of footy, food, family & fun.
