I’ve had my first real big mess up since starting the shack and all I can really say is I’m pretty disappointed in myself. I bought a dough fridge for my garage and made sure it was top notch cleaned and ready for Thursday’s dough day. I made 19 loaves yesterday and placed them in the fridge to cold proof while I went to work, when I got home, everything was over proofed 😔 I forgot to check the temperature first, the dough sat in the 46 degree fridge for about 6 hours before I was able to get home for shaping. I crossed my fingers and hoped I could save them but it was too late. 19 loaves of sourdough and a day and a half of my time/work completely down the drain! Some lessons must be leaned the hard way, I’m truly sorry to make this post but the shack will not have sourdough bread this weekend ☹️
