Grizzly Bagels will be closed for a Winter break the month of February

The bears are hibernating, the ground is blanketed in a fresh coat of snow

(again -insert eye roll here) and all other living things are lying dormant waiting for spring to come. It's a moment of rest before everything comes back to life.

This year, I have made the decision to follow suit. Taking a note from Mother Nature and pausing for a bit of rest before coming back to life in the Springtime. This time will be used by me and the Team to travel and rest. To try new experiences, foods and techniques and come back bright-eyed and ready to serve you all once again.

The last day to get your hands on the Best and Freshest bagels in the Catskills will be Sunday, February 1st. We will then resume service on Friday, March 6th.

Bagels are available to pre-order through January 31st, as well as in the shop, Fridays, Saturdays and Sundays from 9am -1pm. So take this opportunity to stock your freezer!

Can you believe the Roscoe shop has been open ONE YEAR?

I know, it boggles my mind too.

For part of me it feels like the blink of an eye and for the other part, this has been the longest year of my LIFE! So much new, so many changes and so many delicious bagels.

And now that the busyness of the Summer is behind us, I can get back to the part of the business I really enjoy, which is always trying (baking) something new. This Fall/Winter we'll introduce new menu items (soups, sandwiches) new bakery and food items and of course, new bagel flavors.
Starting with the below, just in time for the Fall:
Chai Spice

Now this one has eluded me since at least the Fall of 2022/23 and I have tried dozens and dozens of iterations since with little luck. None of them had the WOW factor that I was looking for to compete with the basic-ness of Pumpkin Spice. The problem I realized, was that the Chai I was using was all meh at best, resulting in a meh tasing bagel, until I happened upon my friend Kendra's tea blend, Wholy Chai from her company, The Herbal Scoop. Packed with the bold flavors of Basil, Cinnamon, Ginger, Astragalus, Turmeric, Cardamom, Orange, Black Pepper, Orange, and Clove I realized that this was WOW that my bagel was missing.

This past weekend we sampled the first batch and the feedback was amazing. This weekend, the Chai bagels will be available in the shop only and a few might make their way to the Barryville Farmers Market, but a very limited few, some come early!

Stay tuned for more developments in the coming weeks.

We're STILL OPEN THURSDAYS so come on by or place your pre-orders for pick up.

Stay hungry and we'll see you soon,
Zach

Roscoe Flea, Saturday, July 19th

Just because fly fishing isn't your thing, don't let that stop you from visiting Roscoe, there's so much more happening, especially this weekend!

What is the Roscoe Flea?

What started as a humble yard sale idea between two friends and a local motel owner has become one of Roscoe’s most beloved summer events. This July 19th, the Roscoe Flea Market turns five—marking half a decade of creativity, community, and curated treasures on the lawn of the Roscoe Motel.

The flea market was born during the early months of the pandemic, when lifelong friends Clark and Gabe, both from New York City, bought a fixer-upper A-frame just outside town. The two had spent their childhood skiing at nearby Belleayre Mountain and dreamed of one day owning a ski chalet in the Catskills. When they stumbled upon the Roscoe property, it was far from a cozy retreat—but the potential was there.

“We bought it as-is,” says Clark. “It was filled with furniture and belongings from the previous owners. Nothing was livable yet—we were doing all the work ourselves—so we needed a place to crash.”

That’s when a friend connected them with Rachael, a mutual acquaintance who had recently purchased the Roscoe Motel, a roadside institution with its own rich past and plenty of inherited furnishings. She offered them a room—and a partnership was born.

“One day we were looking at all this stuff—furniture, old décor, random gems—and we thought, why not sell it all?” Gabe recalls. “Then it clicked: not just a tag sale—a real flea market.”

That first summer, the trio invited a handful of local artists, crafters, and collectors to join them on the motel lawn. What began as a casual gathering quickly gained momentum. Today, the Roscoe Flea features over 16 vendors, including local businesses, artists, vintage curators, tattoo artists, and more.

“Roscoe had a great farmer’s market,” says Rachael, “but there wasn’t a true flea market. Now, people mark their calendars for it.”

As it enters its fifth year, the flea market has grown into a vibrant celebration of small-town culture and community connection. From handpicked vintage clothing to refurbished furniture, handmade goods, and even flash tattoos, the event offers a little something for everyone.

This year’s 5th Annual Roscoe Flea Market takes place on Saturday, July 19th, at the Roscoe Motel. Whether you’re hunting for a one-of-a-kind find or just soaking up the small-town summer vibes, the flea is not to be missed.

Thank you all for an amazing Holiday weekend!

And apologies to those of you that showed up after we had sold out. We broke records with the amounts of bagels we boiled and baked each day, and STILL managed to sell out!

Pre-orders are back open and are still the best way to ensure you get exactly what you want, when you want it.

As Summer continues we are looking to expand our team. We are in need of front of house Counter Assistants as well as a Baker that can work either overnight, or early mornings. Pay is competitive and while experience is appreciated, it is not required. Skills can be trained, but a positive attitude and an excellent work ethic cannot. Summer help is great but really looking for some team members that would be interested in working beyond the Summer season.

The BEST just keeps getting BETTER

We're OPEN the following:

Thursday, July 3rd, 9am-1pm
Friday, July 4th, 9am - 1pm
Saturday, July 5th, 9am-1pm
Barryville Farmers Market 10a-1pm
Sunday, July 6th, CLOSED

As a reminder, you can pre-order from the shop for any of those days at the link below. Given the traffic we have been experiencing lately, pre-orders are the only way to be sure you are getting exactly what you want, when you want it ;).

Order soon, like past Holidays I may have to turn the system off if the demand is too great.

In addition to the best bagels and spreads we have added cold salads, think Chicken, Tuna and Egg as well as in house made cold beverages perfect for these Summer temps: Cold Brewed unsweetened ice tea, lemonade and the classic half & half: (my favorite), iced tea and lemonade.

This week will also be the debut of RAS Smoke, Smoked Salmon and Smoked Salmon Dip, smoked locally in Cochecton, NY and available in our cold case to take with you this Holiday weekend.

Stay hungry and safe this weekend.
We'll see you out there!
Zach

San Juan Mountains, Placerville, CO

While I believe that hard work leads to a sense of accomplishment and satisfaction, often contributing to a fulfilling life. I am reaching a point where rest is just as important.

I spent 9 days in Colorado and Utah while on break, indulging in nothing but rest and self care; barely working and enjoying every moment as it came. Beautiful vistas, great food, the best company, new friends, all resulted in not only some of the best rest I've had in recent memory, but also an incredible feeling of peacefulness.

Now, back at work, I am trying to hold on to the benefits of that rest:

Physical Recovery:
Rest allows the body to repair and rebuild, preventing burnout, injuries, and illness.
Mental Clarity:
Adequate rest improves focus, concentration, and decision-making abilities.
Enhanced Creativity:
Rest allows the mind to process information and generate new ideas, leading to increased creativity and innovation.
Improved Productivity:
While it might seem counterintuitive, adequate rest can actually lead to increased productivity by preventing burnout and improving focus.
Reduced Stress and Burnout:
Rest is crucial for managing stress and preventing burnout, which can have significant negative impacts on physical and mental health.
Stronger Relationships:
Taking time for rest and leisure allows for stronger relationships with family and friends.

I am hoping that this break, as well as future rests, allow me and my team, to better serve you through the busy coming weeks and months.

Ouray, CO

Grizzly Bagels is looking to expand our staff for the Summer Season
Early riser?
Do find joy in hard work and service to others?
Like bagels?

Then have I got the job for you!

Seriously though, we are looking to add counter help and possibly another baker in order to be open more days to keep up with the growing demand. Everyone over the age of 15 is welcome to apply, previous skills and experience are appreciated, but a good attitude, willingness to learn and a desire to be part of a great team is more important. Being at the counter would be a great first job for someone in high school. Pay is competitive and did I mention free bagels?
Click the link below to apply.

Don't forget, we offer pre-orders
There is nothing more frustrating, for you and for me, than someone being disappointed with the offering available when they come into the shop. I do my best to ensure that there are just enough bagels to meet the demand, which is not an exact science, and sometimes, I admit, we come up short. But waste, is loss, and I hate wasting bagels. To ensure that everyone gets what they want, we do offer pre-orders that can be picked up in Roscoe on Fridays and Saturdays as well as pre-orders for pick-up with our friends at the North Branch Cider Mill in North Branch on Fridays.
Simply choose your pick up location when checking out at the link below.

Arches National Park, Moab, UT

The season is just beginning.

Stay hungry,
