I didn’t make the rapture. So I made Pasta Mollicata. It’s cheap. It’s easy.
- 1cup Italian breadcrumbs
- 16oz dried Bucatini (or spaghetti - whatever you have. It’s the rapture but we still owe rent.)
- 1/4 cup extra-virgin olive oil
- 1/2 red onion, finely chopped
- 4 garlic cloves minced
- 10 anchovies filets, oil reserved (back off, they melt, and you don’t even taste it)
- 2 cups breadcrumbs
- 4 Roma tomatoes diced (I didn’t have that. I had one sad tomato. Use what you have.)
- Salt
- Pepper
- Fresh parsley (lightly dried will work in a pinch)
- 2 oz pecorino grated (if you use Parmesan I’m not going to tell your Italian ancestors.)
Cook the pasta for 10 to 12 minutes or whatever your package says. Well that’s boiling, you’re going to put your olive oil into a sauté pan over medium heat. When I add the onion and cook until it’s soft and translucent. Add the garlic and you just wanna get it to where it’s sweating and you can smell it. Add the anchovies and about 3 teaspoons of the anchovy oil, and then the tomato. Sauté it until the anchovies melt down, it’s gonna take about five minutes. Add the breadcrumbs and season with salt and pepper. When the pasta is cooked drain it but keep a little bit of that water a half cup should suffice. Add the pasta directly to the sauté pan and toss it to coat. If you need more add pasta water an ounce at a time, and combine. Divide between four plates and garnish each with parsley and the cheese.
