Every bake there is that one "perfect specimen" that is just the ideal bake. This bagel sang to me while I pulled the lot out of the oven. The shape, the browning, the blistering, the shine...this one hit all those brain satisfaction notes.

I'm just a dude that loves making bread. ✊

When I started doing this 3+ years ago, it was just a hobby. It's grown into a little community bakery and has been so cool to see folks enjoy the bread and become repeat customers because they appreciate what I do. Sourdough is more than just a flavor of bread, it's a baking method, and a core value that orbits around putting good, wholesome food into your body which is something that store-bought bread doesn't offer.

The micro bakery grind isn't always glamorous, but seeing my people come back again and again makes it all worth it.

Keep it simple with a little pizza sauce, mozzarella, pepperoni, and oregano sprinkled on top. Boy did this hit the spot for a quick dinner tonight. 🤌🤌

Sometimes the start of my day just needs to slow down for some positivity and a full belly. This Rise bagel with cream cheese, cucumbers, red onion, tomatoes, and cracked pepper hit the spot.

How do you like your bagel?? 🤔

By the way, peep those blisters on the top of the bagel. 👀🤌 The cold ferment was on point for this batch.
