They see me rollin'...they hatin'...🤘

The dough roller has been punching above its weight and saving SO. MUCH. TIME. in the dividing and shaping step for the bagels and English muffins. Like, it's literally cut my prep time by more than half. This machine has helped me scale up to amounts that I never thought possible before!!

I'm very thankful for Ms. Dutchess's work ethic. She never takes a day off. 😅

English muffins day is always a great day. These lovelies turned out phenomenal today! 😍

I'm proud of this recipe that I've developed over years of trial and error, and I've got this recipe and process dialed in with very repeatable and predictable results. It never gets old to see them come out of the oven. 💪

Every bake there is that one "perfect specimen" that is just the ideal bake. This bagel sang to me while I pulled the lot out of the oven. The shape, the browning, the blistering, the shine...this one hit all those brain satisfaction notes.
