Weekend mornings always felt a little slower when there was a simple cake cooling on the counter.

The smell of toasted nuts drifting from the oven, powdered sugar waiting in a small bowl nearby, and a tender ricotta cake resting beside a pot of coffee somehow made the whole house feel calm before the day even began.

I still remember how the first slice was usually cut while the cake was barely cool enough to handle.

The Coziest Fuss-Free Pistachio-Almond Ricotta Breakfast Cake 🍰✨

Ingredients

1 cup ricotta cheese

1/2 cup sugar

2 large eggs
1/3 cup olive oil or melted butter
1 teaspoon almond extract

1 cup all-purpose flour

1 teaspoon baking powder

Pinch of salt

1/4 cup chopped pistachios

1/4 cup sliced almonds

Powdered sugar, for topping

Directions

1. Preheat your oven to 350°F and grease a 9-inch round or square cake pan.

2. In a large bowl, whisk together the ricotta cheese, sugar, eggs, olive oil or melted butter, and almond extract until smooth.

3. Add the flour, baking powder, and salt.

4. Stir gently until just combined.

Rena’s Tip: Mixing only until the flour disappears helps keep the cake soft and tender.

5. Pour the batter into the prepared pan and smooth the top.

6. Sprinkle the chopped pistachios and sliced almonds evenly over the batter.

7. Bake for 30–35 minutes, or until golden and a toothpick inserted into the center comes out clean.

Rena’s Tip: The cake is ready when the nuts are lightly toasted and the kitchen smells wonderfully nutty and sweet.

8. Allow the cake to cool before removing it from the pan.

9. Dust generously with powdered sugar before serving.
