The Rochester Public Market has been operating continuously downtown at the same location since 1905. A gem for the city of Rochester and roots of powerful childhood memories. The connection for me began with my uncle Carmen. He owned and operated a small fruit and vegetable store at the corner of Lyell and Saratoga avenues in the 70’s and 80’s. A vibrant neighborhood full of Italian bakeries and restaurants. He supplied them all; lettuce, tomatoes, onions, mushrooms and whatever they needed to fill tasty subs and top delicious pizzas. This was the age which Veltri’s, Petrillo’s, Roncone’s, D’Andrea’s, Martusciello’s, Romeo’s Diner, Al’s Stand and others all thrived within the same few city blocks. L&D Produce lie plunk in the middle of this area affectionately known as the “Italian Triangle.” Lunch from any of these spots was a much anticipated treat. A slice of Roman pizza from the coal fired oven at Veltri’s or a sausage, pepper and onion sandwich from Al’s Stand among my favorites.

It is with Uncle Carm I had first contact with the public market. The trek downtown to fill his Chevy cargo van with produce would begin ungodly early on warm summer Saturday mornings. My uncle behind the wheel puffing a Lucky Strike and me bleary eyed and half awake in the shotgun seat. My uncle had the only baby blue van I have ever seen in my life. Notoriously “frugal” I am quite sure he got the deal of the century on it. Informed by his thrifty nature his interactions with the purveyors were always contentious. But isn’t this is the way of the market? The bartering is expected if not required and always goes something much like the tree purchase scene in Christmas Story. I’ve omitted the colorful language from this typical exchange.

“These oranges are awful do you have anything else?” my uncle protests as he exhales the smoke of an unfiltered cigarette from his nostrils.
“They’re fine, you’re crazy. That’s all we got” the vendor responds, clenching a plastic tipped cheap cigar in his teeth.
“They’re too expensive!” my uncle would counter in disgust throwing his hands in the air. Lots of Italians around the market. Lots of talking with the hands.
“That’s the price,” the vendor holds firm turning his back and addressing the next customer.
The vacillation continued on until a marginally lower price was agreed upon. Then we’d move on to the next stall to repeat the entire process. As long as I can remember summer “vacation” meant time to work. These were the lazy days of summer for me.

It was many years later before I returned to the Public Market. In early 2010 I walked the original location of Flour City Bread. By the end of that year, renovations largely complete, we were open and operating our little bakery in this historic building. It felt extremely right for me to choose this location; or had it chosen me? I felt as if I had come full circle and there are still folks around that remember my uncle and his quietly humorous and dry personality.

These early experiences help shaped who’d I become as an adult. These traits include a modest work ethic, the ability to rise early, disdain for negotiations and the rudimentary vocabulary of a pirate.

Pizza Party Every Thursday!

We’re thrilled to share your favorite pizza is NOW available at the Public Market Thursday's 11am to 8pm! We know you’ve missed our delicious offerings at the Brighton Farmer's Market 😢, but we’ve got you covered with fresh, hot pies every Thursday. Dine in or take out! 🍕 Order online for a speedy pick-up. Come hungry and ready to indulge in some seriously scrumptious slices and cold bevvies! Chef Cass will be rocking the wood-fired oven. Come Dine with Us.

A few days ago while chopping onions or some other mundane task I cut myself. This (knock wood) does not happen very often. I set off to find a bandage and anti-bacterial ointment. There was none to be found in the medicine cabinet and I recalled there may be a tube in my old kitchen tool box (a Craftsman, multi-drawer standard red variety) that would reside at the restaurants I once toiled. Low and behold there was indeed a tube of Neosporin. I applied a dab to my wound and blanketed it with a Band Aid. Then I got to wondering, “how old is this tube of Neosporin?” I find myself asking this question a lot lately about random possessions. Often a difficult one to accurately answer with things like socks and other sundries lacking date stamps. I scoured the small tube for an expiration date. I could barely read it. I took a picture and zoomed in on the text (if you’re old enough you know what I’m talking about).

Expired 12/94

My first thought: “wow, I’ve been at this awhile.” My second: “is this safe to smear into an open wound?”

I was relieved that, much like me, though it had lost it’s effectiveness it was not dangerous. Still, this caused me to take pause. Do I really have a 30 year old ointment tube? And it’s dawning on me for how many years I’ve actually been doing this whole feeding people thing. I began reminiscing about the kitchens I once worked, the endless meals I’d prepared, the cooks I had the honor to stand beside, etc. I’m shocked this small tube has me so nostalgic, but it had.

If you’re unaware I had a few careers before Flour City Bread Company. I was an engineer at Eastman Kodak for a decade and a chef for the next one. On February 14, 2009 I resigned my executive chef job. My “plan” to take a year to “figure out” whats next. My kids were 5, 7 and 9. Obama had just been inaugurated. Bread had always intrigued me so I set off to construct a wood-fired oven in my garage. Seems reasonable. No intention of opening a business.
By Memorial Day of that year I was selling my first loaves at the Brighton Farmer’s Market and Flour City Bread was born (an unplanned addition to the family). By the end of 2010 we opened at 52 Public Market and in March of 2020 (amid some minor global crisis) I purchased the buildings at 43-45 Public Market. After a few years of uneventful renovation we relocated to this larger space. Much larger than the bakery required and it seemed ideal to fill it with a restaurant.
The restaurant business has a way of drawing you in. If it’s in your blood few escape it’s collapsed star gravitational force. Opening a restaurant in addition to a bakery is daunting. The hot line is indeed a young persons domain. I needed help. So, I pitched this idea to the most talented young chef I knew, Cassidy Broman. He accepted and is now a partner and chef at Public Provisions.

And what does all this have to do with 30 year old Neosporin? That small tube of goop is a thread that connected me back to my origins in food service. I have been at this a very long time. But it’s been years since I’ve been associated with restaurant kitchens. I am in my element in the kitchen. It is where I am most comfortable.

Public Provisions is the culmination of something that began a long time ago. About the time I purchased that tiny tube of Neosporin. I know we’re often associate with Saturday mornings and the bakery and breakfast sandwiches and the market; but rest assured our night game is on point.
