Cheddar Broccoli Soup
Yield: 6 quarts
1) Peel, cut, and boil potatoes and carrots. Reserve Water.
1254g potatoes
280g carrots
2) Saute onion and garlic in pan.
2 ct large onions
20g garlic cloves
160g canola oil
3) Add tapioca starch to onions and cook until slightly bubbling.
60g tapioca starch
4) Add rest of ingredients to pot and simmer for 15 MIN.
1000mL potato water
2000mL oat milk
160g nutritional yeast
3 Tbs salt
0.5 tsp smoked paprika
0.5 tsp turmeric
2 tsp black pepper
448g broccoli florets
5) Blend cooked soup with immersion blender.
