Cinnamon roll day over at the LenaBakes kitchen!! We have 9 pans going out today, with 36 half pound cinnamon rolls packed into them!! If you were lucky enough to get one of these special order Half Pound Brioche Cinnamon Rolls, they are coming out of the oven now, and will be delivered to your door soon! ****SOLD OUT!!****

Hello friends!
Due to the fact that we are still waiting on our van to be fixed, and that we still have a handful of packaging left over from when we stocked up last, we are doing a special release of LenaBakes World (Utah and Washington State) Famous Half Pound Cinnamon Rolls!!
Each Cinnamon roll weighs in at a half of a pound, and is made with Whole Wheat and Einkorn Flours, filled with Butter, Brown Sugar, Cinnamon, and Caramel, and then topped twice with a thick coating of Vanilla Cream Cheese Icing!

We will only have 6 orders available, each order contains 4 cinnamon rolls, and weighs in at 2 lbs of yummy, fluffy, gooey goodness!! They will only be available one day, next Tuesday the 27th! They will be baked early that morning, and delivered at whatever time works best for you!
Due to higher costs, our need to fundraise for our trip, and the limited availability, each 2 lb pan of four cinnamon rolls will be priced at $20, which is still a heck of a deal!

We are still waiting to get our vehicle fixed to leave on our cross country trip, but today happened to be my birthday, so we are making burgers at the house! It's one of my favorite foods, so I'm pretty excited, but I'm even more pumped because Lena's sister has supplied us with some locally sourced beef, and Lena made the buns pictured below for us to make our burgers! They are handmade potato buns, made with potatoes harvested just days ago from our own garden, a mixture of Russet and Yukon Gold potatoes, which are used with their skin still on, which adds even more flavor to the bun! They were made with a blend of Organic All Purpose, and whole wheat flours, the buns were topped with a blend of white and black sesame seeds before baking.
Luckily she baked a few extra, so we were able to have one by itself, and they turned out wonderfully soft, fluffy, and buttery with an amazing flavor! So, anyway, I'm having the best burger in the world today, hope your burgers are at least okay!! Happy Birthday!!

Happy Friday!! It has been awhile since we had a post, and we are still planning on leaving mid to late August on our year long road trip, but It's harvest time in the area, and we had a special request from a friend! They wanted some Cupcakes and English Muffins to give to the men and women that are out in this heat working to harvest America's wheat!!
So today we are delivering a dozen of our Bananas Foster Cupcakes, which is a Banana cupcake, filled with a Caramel Cream, topped with a Rum Cream Cheese Frosting, and finished with a slice of Caramelized Banana and a drizzle of Caramel!
Those are going out with our very popular Sourdough English Muffins, which are currently being served with a homegrown and homemade Pineberry (white strawberry) jam!

We had a special order for 3 dozen cupcakes go out yesterday!
All are some of our most popular items! The Black Forest Cupcakes, Chocolate cupcakes filled with a Cherry Compote, covered in a Vanilla Ermine Buttercream, topped with a Chocolate covered Cherry, Cherry Grenadine, and shaved Dark Chocolate! Next was our Bananas Foster Cupcakes, fresh Banana cupcakes filled with a Caramel Cream, topped with a Rum Cream Cheese Frosting, and a slice of Caramelized Banana! Lastly our Lemon cupcakes, and between the Lemon cupcakes, the Lemon Curd they are filled with, the Lemon Buttercream they are frosted with, and the Lemon Zest they are topped with, these dozen cupcakes were made with 8 fresh lemons in total!

Well after 7 days of being banned from Facebook for making an "inappropriate" comment about fighting back against the man, we're back!! You missed us didn't you!? You don't have to answer, I know you did, anyway, today we had these beautiful little cheesecakes for sale over at Boxwood Home and Garden!!

They are personal-sized New York Style Cherry Cheesecakes that are 4" across, and each weigh at least a quarter pound! They have a Browned Butter and Vanilla Graham Cracker Crust, which holds a cheesecake made from Cream Cheese, Yoghurt, and Sour Cream, swirled with a homemade Cherry Compote made from fresh Dark Cherries and Maraschino Cherries!

We had a few extra for ourselves, so we plated one, pictured below, with a drizzle of our house-made Cherry Grenadine, and it was bomb!!
Hopefully you got one today at Boxwood! If not, I guess you should be visiting Boxwood more often!

Great Friday morning, friends!!
We have freshly baked Cheese Danish that are still warm being dropped off to our friends over at Boxwood Home and Garden in just a few minutes!!
This is Lena's handmade Danish dough stuffed with a Vanilla Cream Cheese filling and a Mango-Lime Compote, which after being baked is lightly brushed with a Strawberry-Mango Glaze!
There are not many, and just like all of the treats we have available at Boxwood, I'm sure they will go fast, so hurry down there, before they are gone!!

Hello friends!! We will no longer be having our Half Pound Brioche Cinnamon Rolls available at Boxwood Home and Garden, and instead will be premiering some other special treats over the next few weeks! So if you didn't get a chance to try the Cinnamon Rolls, I'm sooo sorry, but no fear, we will be back in a year!! (See what I did there!)

This upcoming Friday, we will be dropping off a couple dozen of our amazing hand-made Cheese Danish! Pictured below is a sample of what they will look like. Don't they look super scrumptious? Don't worry, they are!! The ones pictured below are a Dark Cherry Cheese Danish, whereas the ones we are lucky enough to be serving at Boxwood this weekend will be a a Mango-Lime Cheese Danish!
A wonderful flaky Danish dough stuffed with a Vanilla Cream Cheese filling, with a dollop of a house-made Mango Compote, made using fresh Mango, and a hint of Lime Zest oozing out of both sides of the pastry! It is then baked, then brushed with a Strawberry-Mango Glaze!

We will be doing delivery to Boxwood Home and Garden, at around 7-7:30 Friday morning, so make your plans now to start your weekend off supporting local with LenaBakes and Boxwood Home and Garden!

Happy Wednesday morning everyone!! Today's the day we have been counting down to for the last month, the day the bakery shuts its doors for the next year!!

Other than our baked treats that we will continue to offer over at Boxwood Home and Garden for the next few weeks, if we haven't already talked to you about an order, or told you that you could continue to order after this date, then unfortunately it is too late!!

It has been a wonderful journey since last November for Lena and me! Even though we have lived here in Ritzville for 3 years now, it is crazy to think of how few people we knew in the community when we started down this road, but now, we have been blessed with so many new friends in the Lind-Ritzville area!

Thank you for your friendship, thank you for your support, and we look forward to serving you all again when we return in a year, but also sharing with you our trip of a lifetime on our Facebook road trip page "4 Creatures 1 Van"!

Happy Independence Day!!
Over at LenaBakes, sometimes the oven never rests, and even on this nation's holiday weekend we had orders to prep up so people could enjoy some great handmade baked goods with their families!!
Below we have 48 cupcakes, 2 dozen each of our most popular premium cupcakes!
The first are our Black Forest Cupcakes. They are Chocolate cupcakes, which get their flavor from three sources including: melted Semi-Sweet Chocolate Chips, Ghirardelli Majestic Dark Cocoa Powder, and Creme de Cacao. These cupcakes are cored out and filled with a Cherry Compote made using Maraschino and fresh Dark Cherries, along with a Cherry Brandy. The cupcakes are then topped with a Vanilla Ermine Buttercream Frosting, and garnished with a hand-dipped Chocolate covered Cherry, shaved Dark Chocolate, and a home-made Cherry Grenadine.
The second cupcakes pictured are our Bananas Foster Cupcakes, which have Banana Cupcakes made with fresh bananas, Banana Extract, and Banana Bourbon. They are cored and filled with a Caramel Cream, then topped with a Rum Cream Cheese Frosting, a slice of Caramelized Banana, and a drizzle of Caramel!

Get your orders in before it's too late! Only 2 days left before the bakery shuts down!
