I hope everyone had a blessed Easter and a wonderful spring break to all my fellow teachers out there! I discovered a new recipe this week for Carrot Cake Cookies and all the kids in my family loved them! They are a cross between a carrot cake and a Little Debbie's oatmeal cream pie, thanks to the cream cheese glaze drizzled on top! What a great discovery!
