It's been an unbelievably crazy ride the last 5 years. Both in our business and in our personal lives. So I wanted to share a little bit about how we started.
•
The first time I made croissants as La Casita Bakeshop, I was in the back of Small Brew Pub with my sheeter (the only piece of equipment I owned). This was 2017! I would start making croissants and into the night I would work until I was done and then I would deliver them myself. My first client? Cultivar Coffee. ❤️
•
I was 27, I didn't know if this would EVER take off and I was doing it all alone. Until my wonderful boyfriend @elgallo2618 jumped in to help me get things off the ground. This is where it became real.
•
We left there to go to a rental kitchen, which closed overnight. So we got desperate and started looking for a place to land in. A place to call our own. We found our current place through our friends at @tribalalldaycafe . This was a game changer.
•
From there we did pop ups, events, and started opening Saturday mornings, all while still doing wholesale 7 days a week. At this point we are working 7 days a week for 3 years, with no end in sight. And then, the pandemic hit. We closed that St. Patrick's day weekend. That was the first time we had a day off and Saturday morning free in 3 years. It was a blessing in disguise. Except we were scared sh*tless.

@keepbriweird our Director of Operations came during this time, she helped get our online store ready and we had now become more than just a small bakery. We started doing curbside and pick up only, no in store. This was how we thrived during a pandemic.

To navigating the mask, COVID-19 tests, vaccines, sick employees, and everything else in between. We have managed to stay alive and continued to grow.
All of this because of all of you. I could've done all of the above and
