📣Allow me to reintroduce myself!📣

My name is Maricsa Trejo! I am the founder, co-owner and Head Pastry Chef of La Casita Bakeshop!
I started this bakery with myself and other women in mind. A place free of unwanted attention, chefs being able to demean and hurt people, and others taking credit for my own creations. I started La Casita Bakeshop, for me and other people like me. Tired of male Chefs thinking they held my career and my dignity, in their hands.
Fast forward to 2017, I started La Casita with no money in the back of Small Brew Pub with no real direction. Until my wonderful Husband stepped in and helped me find a path towards our current trajectory.
The first three years I am not going to lie, I wanted to give up. It tested my relationship, my mental health, and it's the smallest I have ever been. I truly appreciate those hard years because it helped me get through COVID and many other hard personal and professional times in life.
We have won many awards and received many accolades over the years and I am very proud because we did this during a time when our staff was growing and still new to this. Those of you who are in the hospitality industry know how hard this is to do when training and building a team.
Fast forward to now, our year of growth. We are currently working towards opening new locations and training a WHOLE new staff to open these places. This year we worked hard to push through but we didn't make it to the finals for James Beard, which was a wake up call. We must do better than last year not just for an award, but for our customers and most importantly, ourselves.
Awards or no awards, the best part about these accolades is it builds a culture of people willing to strive to be better at every step of the way. Who wouldn't want that for their customers and business? It's easy to get comfortable and let things fall into place, we have done that, but mark my words we are constantly pushing even if you can't see it.

🎉¡We have hit 15K!🎉 • "Started from the bottom now we here, started from the bottom now the whole team f@#king here!" • It's been an unbelievably crazy ride the last 5 years. Both in our business and in our personal lives. So I wanted to share a little bit about how we started. • The first time I made croissants as La Casita Bakeshop, I was in the back of Small Brew Pub with my sheeter (the only piece of equipment I owned). This was 2017! I would start making croissants and into the night I would work until I was done and then I would deliver them myself. My first client? Cultivar Coffee. ❤️ • I was 27, I didn't know if this would EVER take off and I was doing it all alone. Until my wonderful boyfriend @elgallo2618 jumped in to help me get things off the ground. This is where it became real. • We left there to go to a rental kitchen, which closed overnight. So we got desperate and started looking for a place to land in. A place to call our own. We found our current place through our friends at @tribalalldaycafe . This was a game changer. • From there we did pop ups, events, and started opening Saturday mornings, all while still doing wholesale 7 days a week. At this point we are working 7 days a week for 3 years, with no end in sight. And then, the pandemic hit. We closed that St. Patrick's day weekend. That was the first time we had a day off and Saturday morning free in 3 years. It was a blessing in disguise. Except we were scared sh*tless. • @keepbriweird our Director of Operations came during this time, she helped get our online store ready and we had now become more than just a small bakery. We started doing curbside and pick up only, no in store. This was how we thrived during a pandemic. • To navigating the mask, COVID-19 tests, vaccines, sick employees, and everything else in between. We have managed to stay alive and continued to grow. All of this because of all of you. I could've done all of the above and
🥚It's the Egg Yolk filling for me.🥚 • When @eatfood.nomnom shared this I was 😱 it's EGGS ACTUALLY what I wanted to see. • This menu this pop up meant a lot to us and to be able to support our wonderful friends @thebobaplugtx and also donate to @stopaapihate is just amazing. • To all of our Asian American friends and those all around the globe, we stand with you. • You deserve to be here and if we see something we will help.
