I made homemade mayo today, and I could not recommend it enough! The recipe is so easy, and it takes about 5 minutes to make. Today I also added a ‘Basil & Tomato’ seasoning, along with salt and pepper to make a more flavorful sandwich spread. Yum!
Mayo Recipe
- 1 egg
- 1 Tablespoon vinegar
- 1 Teaspoon mustard
- 1 cup avocado oil
- seasonings, to taste (optional)
1. In a wide mouth ball jar, add the egg, vinegar, and mustard. With an immersion blender, combine ingredients.
2. With the blender on, very slowly pour the oil into the jar. You want as tiny a stream of oil as possible at the beginning, nearly drop by drop. Too much at the beginning will cause the emulsion to break, so be patient.
3. Once you’ve poured about 1/3 of your oil, you should see it start to thicken up. Now you can add the oil a bit faster, and you’ll see it gets thicker as you add more.
4. After blending all the oil, you are done! If you are using seasonings, add it now to your liking. You may need to stir then in with a whisk or fork.
Store in the fridge for 2 weeks. Enjoy on hamburgers and sandwiches!
