Todays meal was a labor of love. Justin and I celebrated our 12yr wedding anniversary Friday. I'd planned on making him one of his favorite meals, but he'd also planned on taking me shopping and for dinner so I didn't have to cook. We'd spent the best part of yesterday volunteering to paint at our local history museum. So, today I woke to start the smoker and throw on a pork belly. Dry rub first, a few hours of smoke and char then cubed and tossed in some BBQ sauce, brown sugar and the sorghum we'd found at Main Street Flower Market then another 30 on the smoker to candy. It was the best I've made yet. We cut some more lettuce from the garden for a salad, had homemade cracklings from the fat id trimmed that morning to go on top with our homemade croutons, fresh squeezed lemonade sweetened with our Rhubarb syrup and Butter beer cheese cake for dessert. It's been a wonderful weekend full of love here. ❤️
