Thank you, Fairmont Banff Springs for the healthy recipes and the opportunity to give back to nature. My trip to Banff was truly impressive and brought much rest and relaxation. In return, I have donated $125 to glacier research/conservation and wildfire prevention, which affect our ecosystems greatly.

This will be the first and last time I will be baking and selling this collection — but don’t worry I’m not gate keeping the recipes. Happy baking, friends!

These cookies have been the favorites on my menu. Give them a try and you’ll see why.

Each cookie is crafted with a different base, making them truly unique.

Carrot cake cookies - cake like cookies with freshly grated carrots and oats sandwiched with a cream cheese frosting.

Brown butter toffee cookies - these take extra effort to make but are worth it for the caramel notes. Not a thick cookie for those that like the chewy center and crispy edges.

Dark chocolate cherry chip cookies - super soft cookie with rich dark chocolate and cherry flavors. Put a scoop of ice cream in between for the ultimate dessert treat!
