I originally created this flavor in honor of my mother-in-law because she had asked me to make her a lemon meringue pie for her birthday, but sadly passed away just days before. Seeing how much you all have loved them makes this flavor even more special to me.

Before she passed, she had asked me to make her a lemon meringue pie for her birthday. Sadly, she passed away just days before I had the chance to make it for her.

So this week, I made these for her.
Each lemon macaron shell is filled with homemade lemon curd and a light, fluffy French meringue, then lightly torched on top. Each one is basically its own little personal lemon meringue pie. ๐Ÿ’›

Itโ€™s a bittersweet flavor for me to make, but I canโ€™t think of a better way to include something she was looking forward to in this weekโ€™s menu.

I havenโ€™t posted in a couple of weeks because our family lost my incredible mother-in-law. She was such a huge supporter of my business, always ordering to share with friends, neighbors, her aids, and anyone who walked through her door. I miss her dearly.

She lived with MS for almost 34 years. Through it all, she never complained. She was the strongest woman Iโ€™ve ever known. Her humor and positivity touched everyone she met.

Her favorite color was purple, so this weekโ€™s vanilla bean macarons are purple in her honor. I also made burnt orange creamsicle macarons because orange is the color of MS awareness and of course of her beloved Texas Longhorns as well. Iโ€™ll be donating 50% of sales from those two flavors to the National MS Society in her memory. ๐Ÿ’œ
