Fried Okra Mississippi Style:

4 Cups of Okra, chopped, 2 teaspoon Paprika, 2 teaspoon Salt, 2 teaspoon Black Pepper, and 1 cup Cornmeal.

*Do a quick rinse in cold water.

Cut the Okra pods into small pieces crosswise.
Fried Okra, Mississippi Style:

Season with the Salt, Paprika and Black Pepper, and combine with the Cornmeal until well covered.

Add one cup of vegetable oil to a medium size skillet. Let the oil get hot, then add the Okra.

Leave it to cook on one side until browned.

Then stir lightly to coat, and turn over to other side to brown.

Remove from the oil when thoroughly cooked and browned.

How To Make A Really Great Meatloaf!

Start with 2 pounds ground Beef, 1cup Bread crumbs, 2 tablespoons Italian seasoning, 1 medium Onion, chopped, 4 Garlic cloves, chopped, 1 Tablespoon Salt, 2 teaspoons smoked Paprika, 2 teaspoons, Black Pepper, and 1half cup Ketchup.

Preheat the oven to 375 degrees. Combine the Italian seasoning, Salt, Black Pepper and Paprika.

Add the seasoning blend to the ground Beef. Blend in the Breadcrumbs and Ketchup.

Combine all the ingredients together thoroughly and place in a loaf pan. Cook for 30 minutes.

Spread some Ketchup on top of the Meatloaf and let it cook for 15 to 20 minutes longer, until lightly browned and cooked through.

Sweet and Tangy, Southern Candied Yams...

Candied Yams: 6 cups Sweet Potatoes, 2 teaspoons salt, 2 cups brown sugar, 2 cups Orange Juice, 1 Tablespoon Cinnamon, 2 teaspoons nutmeg, and 1 stick of butter. Heat the oven to 400 degrees Fahrenheit. Combine the brown sugar, cinnamon, nutmeg, butter, orange juice, and salt in a pot.

Let the mixture come to a low boil and cook on medium-low heat for 15 minutes or until thickened. Remove the syrup from the heat. Butter the bottom and sides of the dish. Cut the Sweet Potatoes into medium size chunks, put them into your buttered dish and pour the mixture all over the Sweet Potatoes.

Cover with foil and bake for 30 minutes. Stir the Potatoes lightly, being careful not to mash the chunks. Cook uncovered for 30 minutes longer at 350 degrees, until tender and golden.

Candied Yams are my favorite side dish to go with Collard Greens and Southern Fried Chicken😊

😋Pinto Beans and Rice: Pinto Beans are one of my all time favorites. My Mama used to cook these Beans on the regular. These were our Sunday-go-to meeting-beans. So I'm gonna let you in on the way I prepare them.

🔘Fill a large bowl with water, add the Pinto Beans.

🔘Be sure that they are covered with water at least one inch.

🔘Stir them up to make sure they are well saturated throughout while they are soaking.

🔘Leave them to sit for one hour.

🔘Then, fill your cooking pot one half full with water, and let the water begin to boil.

🔘Add the Pinto Beans to the water.

🔘Let them cook for 30 minutes on medium low heat.

🔘Then add a chopped onion, salt to taste, and brown sugar.

🔘Let cook for one hour, or until fully cooked. Stirring often.

🔘Regular Rice, one cup: Rinse the Rice, add it to 2 cups of boiling water, and one fourth cup Olive oil. Cook on Low heat for about 15 minutes, or until tender, stirring often.

How To Cut An Onion

Cut the Onion in half lengthwise, through the length of the root and top part of the Onion. Lay one piece aside. With the other piece of Onion, peel off the top skin and discard it.

Lay the flat side down, cutting it crosswise until you reach the root, but do not cut through the attached root. Finish chopping the Onion and add it to the Collard Greens in the pot.

"How I Wash and Prepare My Collard Greens"

🥬To prepare my Collard Greens, I first put a large bowl in the sink and fill it with warm water, then wash one leaf at a time while the water is still running to remove debris. Then I stack about 6 of the Collard leaves together, roll them up and cut them horizontally into thin strips, like pasta. In the meantime, my hammocks have been cooking on medium low in my stockpot for about one hour. Let the Greens cook for 30 minutes, stirring often. Then add a chopped onion to the pot.
