Currently, the only option to purchase our baked goods is at our pop-up bakeries. I'm one of those lucky people whose mom taught them how to bake from an early age. We did lots of baking growing up, especially around the holidays. Mom taught me how to make everything from bread to cinnamon rolls to grandma's famous potato donuts (probably the reason Krispy Kreme has never impressed me.) After high
school, I spent a year as an exchange student in Switzerland, which opened up my eyes and taste buds to an entirely different kind of bread. This bread was substantial. This was real bread. This was why my jaw hurt for the first week I lived abroad. I'd never had to work to chew bread before, but it was so, so good. After returning home, I began expanded beyond the baking I learned growing up to include more European-style breads. One of my favorites to make was Zopf (which most of my friends found difficult to say and eventually named "Karla Bread" - what I now call the Sunday Swiss.) Eventually I began experimenting with sourdoughs. long fermentation, and freshly milled grains. I love making bread. But there is also something spiritual about the smell of baking bread and sharing a delicious loaf with friends. Old Soul bread is bread that I hope brings out the old soul in each of us and takes us back to when times and bread were simple.
