Nice to meet you. Chef Paul here. 👨🍳
If you’ve ever wondered who is behind your bread, a bit of bts..
Long before Le Pain de Paul, my story began in some of the most demanding kitchens in the world.
I trained at École Paul Bocuse in France and The Culinary Institute of America, and had the privilege of working in legendary 3-Michelin-star kitchens, including alongside Paul Bocuse himself and at Le Louis XV in Monaco.
Working with Paul Bocuse changed the way I understood food.
What stayed with me wasn’t only the technique. It was the standard.
Nothing was “good enough.”
Every ingredient mattered.
Every detail mattered.
Every plate leaving the kitchen represented your name and your craft.
Years later, that philosophy is still with me.
Only today, instead of a Michelin-starred dining room, my kitchen is here, and what leaves it is your sourdough, your baguette, your croissants, your pastries and fresh pasta.
Le Pain de Paul is a small bakery, but I’ve never believed that small should mean ordinary.
Everything is made fresh, in small batches, with the same attention to ingredients, technique and detail that shaped me as a chef.
Because whether you’re serving a plate in a three-Michelin-star restaurant or a croissant that someone will enjoy at their kitchen table, the standard should be the same:
Make it the best you possibly can.
That is the story behind Le Pain de Paul.
And every Tuesday and Friday, I get to bring a little piece of that story to your table.
Bon appétit!
