Introducing Sir Stabbington our Sherriff Cowboy Cactus Chocolate Showpiece! 🌵🤠

Our chefs picked out the theme (yes we all wondered why this one 😂)and we had 4 days as a group of 2 to build this character. We followed the chefs demonstrations for the structure but were able to have some creative freedom for the designs of the face and body.

It is super cool to know we created this piece entirely of chocolate. It was hard work and I am very proud of it!

Week 9: Entremets

I absolutely loved this week. It made me realize that I would want to focus more on these types of products after graduation. Each entremet has so many components; different layers and textures and it is finished to look like a work of art. It takes time and patience but it is so rewarding!

Petit Gateau : Week 8 in France

Petits Gateaux are smaller desserts that have multiple components and layers, usually some form of sponge, crunch and cream.

Each group of 2 focused on 3-4 unique products so it was fun to watch and learn all the different techniques used throughout the class for the 17 products that were created.

I loved this week! Creating and eating all of the incredible layers of textures and flavors!

We had a challenge day to create our own unique tarts. My lab partner Gini and I made a whiskey s’mores inspired one!

It is a chocolate tart shell filled with a brownie, candied pecans, a whiskey caramel and topped with a toasted swiss meringue.

We cut the hole in the middle to change up the shape of a traditional tart.
