I had a cookie order for three dozen cookies, so I doubled the dough and made cookie pies that I have been wanting to make. The first one is a Bourbon Oatmeal Raisin. I usually soak the raisins in Makers Mark, but was out so I used Jim Beam Honey. Holy smokes ya'all! For the filling I used a Ghirardelli white chocolate filling with cream cheese emulsion and for the top layer I added maple emulsion to the cream cheese filling and used pecan sandies in the middle. These cookie pies aren't as sweet as you might think, however they are rich.
I have a Chocolate Chip Pie filled with Nutella, Reese’s Peanut Butter Cups, Salted Caramel base, pretzels and peanut butter for the last layer. I also have a Chocolate Chocolate Chip made with black cocoa powder and filled with a coffee flavored base, Ferrero Roche candy, Tiramisu Oreos and the Salted Caramel base as the top layer. Both are in the fridge setting up and will post pictures tomorrow when I cut them. Can't wait!
