Iā€™m not usually much of a recipe sharer, but this fancy mixer deserved something fun and new.
Hereā€™s the full recipe Iā€™ve created for Sweet Corn Sourdough:
500g creamed corn
300g starter
140g sugar
40g honey
1700g flour (I use Kirkland organic all purpose)
1 can drained corn
25g pink Himalayan salt

I like to make 830g loaves, but you can make these however big you want! Itā€™ll end up making around 3.

As you can see, the 7 qt mixer by ZACME can handle this dough with ease! Let it proof right in the mixer bowl = less dishes to deal with later.

Hereā€™s a little about the owners of the new Plainfield Bakehouse:

-Kim grew up in downtown Plainfield, graduating from Plainfield Central!
Her family is still in this area.

-My (Michaelaā€™s) family has been in Plainfield since 1910! Both of my grandmothers (both sides) went to Plainfield schools, my parents both went to Plainfield schools, and I lived in Plainfield on and off in childhood.

Moving back to Plainfield in 2022 with my husband and daughter, I didnā€™t realize how far back my roots go in this village!

Opening the Plainfield Bakehouse feels like coming home for both of us in different ways.

We look forward to sharing pieces of history in this beautiful downtown historic storefront!
