The doubts, the pressure, the mom guilt, the “what ifs”… Wondering if I’m doing enough, choosing the right path, or simply overthinking everything?

I’ve had all of these thoughts while building Catalina’s. Some I still have (constantly 🫣).

But I think that’s part of building a dream. You build, you question, you learn, you keep going, and you enjoy the ride 🫶🏼.

The doubts, the pressure, the guilt, the “what ifs.” Wondering if I’m doing enough, giving enough, choosing the right path, or making things harder than they need to be.

I’ve had all of these thoughts at some point while building Catalina’s. Some of them I still have.

I think that’s part of it. You build, you question, you learn, you keep going, and most importantly you enjoy the ride 🫶🏼

Sometimes the best cakes come from a memory...

Years ago, a customer came into Catalina’s looking for a cake she remembered from childhood in her country. A simple yet unforgettable combination of cake, manjar, fresh fruit, Chantilly cream, and French meringue.

As we recreated it, we realized this beloved Latin American cake shares something in common with both the American Strawberry Shortcake and the French Fraisier, but with a personality of its own.

Light, fresh, and not overly sweet, it combines layers of delicate vanilla genoise, homemade dulce de leche, sliced strawberries, Chantilly cream, and chunks of French meringue.

Today, the Strawberry Vanilla Genoise Cake has become a favorite at Catalina’s, especially for those who love Pavlovas and desserts that celebrate fresh strawberries in every bite 🍓🍰!!

Somehow we blinked and Santi & Isa are starting their last first day of school together 🥹❤️. From middle school hallways to SENIOR YEAR! 🎓

Best of luck to every student, especially our Seniors! Between college applications, big decisions, deadlines, a little senior year stress 😅 and SO many exciting moments ahead... may this year be filled with unforgettable memories, big dreams and the courage to go after them.

Enjoy every second. It goes way too fast!
