Canelé , a perfect small pastry that holds complex flavors. When it’s baked to perfection it has a thick dark caramelized crust with soft airy custard inside. The combination of rum, vanilla and sugar gives the caramelized crust a crunchy chewy distinctive texture and flavor. The inside is an airy vanilla custard, one must cut in half to appreciate its inside structure.
