Cookie of the Day: Cream Wafers

When I was young, I never knew anyone outside of our family who made cream wafers, and I always wondered why. Cream wafers are delicate, sweet sandwich cookies filled with buttercream frosting.

Cream wafers are a special treat because they don't keep - you pretty much need to eat the whole batch the day you make them. But once you get a taste, that likely won't be a problem. It's impossible to stop eating them!

Cookie of the Day: Shortbread

Oh, Shortbread, how I love you! If forced to choose a favorite cookie (which is nearly impossible), I would have to choose Shortbread. They are pure buttery, sugary goodness.

I have always adored the simplicity of these cookies, and I always will. An extra touch of semisweet chocolate balances the flavors perfectly.

Cookie of the Day: Rugelach

I've enjoyed eating rugelach for many years, but only recently started baking them. I worried they would be too fussy to bake, but they're not as complicated as I thought.

Rugelach are really more of a pastry than a cookie and with classic flavors of cinnamon, brown sugar and apricots, how can you go wrong? A friend of mine described them as a breakfast cookie and I think it's a perfect description!

I LOVE Linzer cookies. They are huge, decadent sandwich cookies, made with buttery shortbread and raspberry filling. The holidays don't feel like the holidays for me unless I've baked at least one batch.

I prefer to make them with shortbread cookies, instead of the traditional dough made with nuts and spices because I just can never get enough shortbread. The sweetness of the cookie paired with the tart fruity filling is sheer perfection!

Cookie of the Day: Chocolate Crinkles

Chocolate Crinkles are a recent addition to my cookie repertoire. I started making them just a few years ago when I realized how few of my cookies were chocolatey. They're light and crisp, with a deep chocolate flavor.

These are the only cookies I make without butter! But don't worry, they're made with oil, chocolate, and plenty of sugar, so they're still quite rich. Chocolate Crinkles are excellent with a cup of coffee (or all by themselves!).

These nutty delights are a favorite of mine. They have many names - Russian Tea Cakes, Mexican Wedding Cakes, Snowballs, and more. You can make them with pecans, walnuts, or even black walnuts which adds a super unique taste.

Walnut Jumbles are buttery, nutty, sugary, and a little melty and crumbly, all at the same time. I love them!

Spritz cookies are small but mighty! I like to flavor mine with vanilla extract and a hint of cardamom for an extra rich taste. They are also lovely with almond extract.

Spritz are made with a cookie press which can be finicky. When my sister and I were young, our Mom had us convinced that we were SO much better at operating the cookie press than her. We happily pressed away - and always, always tasted the dough...

Cookie of the Day: Sugar Crisps

Sugar Crisps were a special treat in our home when we were growing up. My grandmother baked them VERY occasionally and they were the absolute best thing she made (I loved her dearly, but she was not the best cook!).

These delicate cookies are really more of a pastry - layers of sugared dough twisted together and baked to a light golden brown. If you like vanilla cookies, you will adore these gems which are coated in vanilla sugar - you definitely can't eat just one!
