What a sad, sad turn of events this has been. You know I had to make a cake in honor of our beloved. šŸ˜­

Also, I shouldā€™ve never stood the cake upright until it was final-coated and smoothed so I could just touch it up once I stood it up. Hindsight is 20/20. šŸ˜‚

Somebody asked me how I fill my piping bags so it doesnā€™t make a big olā€™ mess. I figured it would be far easier to show you how I fill my piping bags so the buttercream doesnā€™t get all over. Filling and piping takes a little practice, but itā€™s pretty simple once you get used to it! There is no one right way, but this works for me, so I stick with it. šŸ˜‰

I think Iā€™ve been very transparent about my beliefs, my values, and where I stand on things, and it certainly doesnā€™t align with what that business supports or believes. I didnā€™t know, but now I do. When we know better, we can do better. This is why I love my community so much. When the community calls for help, YOU ANSWER!

The Neighbors Coffee and Books had a woman pay for 50 kids to get free books in honor of Dolly Parton yesterday. What transpired next is amazing. From what Iā€™ve been told by the owners, customers started a long train of paying it forward- paying for othersā€™ orders, purchasing sleeves and writing Dolly quotes on them for others, paying for MORE kids to get free booksā€¦the list goes on. The problem is (which we can hardly call a problem), they donā€™t have enough kidsā€™ books! So they put out an SOS call to the community for anyone who has extra books lying around to donate. We JUST got rid of a giant box of old kidsā€™ books while moving, so I figured this was the next best option in the meantime.

I have already gotten messages from folks wanting to donate books or send books if theyā€™re not local. I canā€™t express my gratitude for that. When I dropped off the books I purchased tonight, the owners let me know that not only are they looking to fill five bookshelves in kidsā€™ books, but theyā€™re also planning something EXTRA cool for the kids that I donā€™t think I can share yet, since I donā€™t think theyā€™ve announced it or posted about it yet. Are you kidding me? This is the kind of business I will always support. Theyā€™re local, theyā€™re delicious, theyā€™re kind and amazing humans, AND they genuinely care about the people in their community. Thatā€™s what we need more of. ā¤ļø

If youā€™d like to send any books or contribute in any way, please reach out! Iā€™d be more than happy to figure it out if youā€™re local, or give you the address to ship to if youā€™d prefer. Iā€™d also HIGHLY encourage you to consider finding ways to contribute/look out for your own community. You can donate things a local business needs, you can help a neighbor with yard work, you can get your elderly neighbor groceries to make their life easier, you can smile and acknowledge a strangerā€¦itā€™s not about money. Itā€™s about taking care of each other- from the youngest littles to the elderly, and every single person in between. The smallest things add up when we all come together.

I canā€™t get over how beautiful the sun is when it shines into the kitchen every morning. Our old houseā€™s kitchen faced South, so we never got ā€œgoodā€ lighting in there. Now our kitchen faces East, so we get the glory and beauty of the morning sunrises filling the room every day. The living room faces West, so we get the warmth and coziness of the sunset filling the room each evening. Natural light in the house is such an important piece of my day for so many reasons. I just love it here. šŸ’›šŸ‹

I am asked for my Swiss meringue buttercream recipe all the time, and I havenā€™t posted a recipe/tutorial video in awhile, so here it is!

SMBC can be very intimidating at first because it requires more steps, but I promise you it is NOT difficult. Not only is it pretty straight forward, but it also almost always has an easy solution for any issue you may encounter (I have a separate video around here somewhere for FAQs/rescue tips). SMBC is smooth, silky, and not so heavy on the sweetness like American buttercream. Itā€™s lighter, more comparable to the taste of a whipped frosting or soft-serve ice cream, and it doesnā€™t crust over. Itā€™s stable, it hold shape/piping perfectly, and it can be left at room temp safely for a couple days just like ABC. I strictly use SMBC and have for YEARS, and it is always the number one compliment my cakes receive! Iā€™m a frosting scraper- I really am not big on buttercream in general- but this one could be eaten by the spoonful. I am unfortunately speaking that from experience. šŸ˜‚
