Heavenly Lemonade Cream Cheese Layer Cake

Ingredients :

Lemonade Cake

8 oz cream cheese, softened (226g), full-fat recommended
1 ½ sticks unsalted butter, softened (168g)
2 cups granulated sugar (400g)
4 large eggs, at room temperature
3 cups cake flour (342g)
2 tsp baking powder (8g)
½ tsp baking soda (3g)
½ tsp salt (3g)
½ cup milk (175g)
½ cup thawed frozen lemonade concentrate (reserve a little for brushing the layers)
Âź cup vegetable or canola oil (54g)
Zest of 1 lemon (optional)
1 tbsp lemon extract
Yellow gel coloring (optional)

Lemon Cream Cheese Frosting :

3 sticks unsalted butter, softened (339g)
16 oz full-fat cream cheese, softened
1 tsp vanilla extract (4g)
1 tsp lemon extract (4g), adjust to taste
½ tsp salt (2g)
7 cups powdered sugar (805g), or to taste
Yellow gel coloring (optional)

Optional Lemon Glaze :

A small amount of the reserved lemonade concentrate, for brushing between layers

Instructions :

Make the Cake :

1. Prepare the pans
Heat the oven to 325°F (163°C). Grease and flour three 8-inch round pans and line the bottoms with parchment circles.

2. Mix dry ingredients
In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set aside.

3. Combine liquid ingredients
In a separate bowl, stir together the milk, oil, lemonade concentrate, lemon extract, and lemon zest.

4. Cream butter & cream cheese
In a stand mixer, beat the butter and cream cheese until smooth.

5. Add sugar
Slowly add the sugar and beat for 2–3 minutes, until the mixture becomes fluffy.

6. Add eggs
Add the eggs one at a time, mixing just until incorporated. If using food coloring, add it here.

7. Bring everything together
On low speed, alternate adding the dry mixture and the wet mixture—starting and ending with dry. Mix only until everything is combined.

8. Bake
Divide the batter evenly into the prepared pans and bake for 28–30 minutes, or until a toothpick comes out with a few moist crumbs.

9. Cool
Allow the cakes to rest in their pans for about 10 minutes before transferring them to a wire rack to cool fully.
(Yields approximately 8 cups of batter. Works for cupcakes too—expect little to no dome.)

Make the Frosting :

1. Beat the softened butter until creamy.
2. Add in the cream cheese and continue mixing until smooth.
3. Mix in the vanilla, lemon extract, and salt.
4. Gradually add the powdered sugar on low speed. Increase speed and beat until the frosting is smooth and fluffy.
5. Add a touch of yellow gel coloring if you want a soft lemon hue.
6. If the frosting becomes too thick, loosen it with a splash of milk or lemonade concentrate.

If making ahead, refrigerate and bring back to room temperature before re-mixing.

Assemble the Cake :

1. Place the first layer on a cake plate.
2. Brush lightly with lemonade concentrate (optional) and spread a generous amount of frosting on top.
3. Repeat with the remaining layers.
4. Apply a thin crumb coat around the outside and chill for about 10 minutes.
5. Add the final coat of frosting, smoothing or adding texture as desired.
6. For decoration, pipe a border using a 1M tip if you’d like.
