Madeleines by Madeleine My name is Madeleine and I bake...madeleines! Madeleines or "petite madeleine" originates from the Lorraine region in northeastern France.

Madeleines are small sponge cakes with a unique shape acquired from being baked in shell pastry molds. They are thought to be named after a 18th century pastry chef, Madeleine Paulmier.
