Meat! Delicious food and frosty drinks from Jeff! Raffle baskets! Sweet treats!

One last treat to mention-a chocolate cake sammy. Two respectable layers of a toothsome chocolate cake, filled with my silky, chocolate ganache/buttercream hybrid. Why is it a hybrid? Because it’s literally a ganache that’s been melted into a buttercream. This whole cake situation should be criminal, but it’s very legal and available for purchase.

Tomorrow is the day! The meat raffle fundraiser for Little Orphan Animal Rescue - Montello, WI at Yahooz! There’s one item that I didn’t showcase, so here’s the final sweet treat.

This heart is BIG. She’s a mint shortbread base, piped with a smooth and creamy white chocolate ganache, finished with a dip in homemade magic shell. Remember that stuff from our childhoods? Or maybe you’re still eating it to this day, and if you’re not, I gotta ask why. Anywhoo, this is a mix of milk and semisweet chocolate with a sprinkle of kosher salt for that savory bit you’ve all come to expect from me.

And Robin, along with the palmiers, this is egg free. 😁

Who’s ready for another sneak peak for Saturday’s sweet treats?

This is currently my favorite cookie. If you see me sneaking one on Saturday, no you didn’t and I’ll thank you to mind ya business.

She’s an almond sugar cookie with an American buttercream rosette of frosting. But Maria, why is she so special?

This beauty is a soft, almond flavored sugar cookie base that’s been rolled in raw cane sugar, baked until “just” right, flattened and frosted with the smoothest, almond American buttercream. This cookie requires babysitting, sometimes she feels like working, sometimes she doesn’t. But the extra work is what makes her so special.

If there was ever a cookie that falls just shy of being slightly savory, this is the cookie. The incomparable Penzy’s Spices almond extract combined with a higher level of salt content, and finished with that raw cane sugar crunch texture is what gives this pink lady that extra kick.

Now look, I know I said the Maldon sea salt milk chocolate chip cookies needed no further explanation, but I feel they do need a “little” bit of explanation to showcase their attributes.

These babies are different from a run of the mill chocolate chip cookie. They’re made with invert sugar. Stand back son, we about to SCIENCE 🧪!

Invert sugar is made by breaking the bonds of glucose and fructose. It’s a chemical process involving granulated sugar, water and cream of tartar. That’s it! When done correctly, it becomes a beautiful, liquid gold form. It increases the Maillard reaction, it attracts moisture, increases tenderness, and I can use less sugar when mixing these cookies. Sigh, more math. 🤣 On the flip side, that also means the method of baking has to be adjusted. Lowwwww and slow is the name of the game.

These cookies are something special and I can’t wait for you to get your hands on them on Saturday at the meat raffle for Little Orphan Animal Rescue - Montello, WI at Yahooz!

(There’s still plenty of sugar tho. I’m not completely insane, and full disclosure, these cookies are 100 grams at 5” across! They’re definitely for sharing, but we won’t tell if they mysteriously become a single serving)

As promised, here’s the sweet treats list for the Little Orphan Animal Rescue - Montello, WI meat raffle fundraiser on Saturday, 1/31 at Yahooz! Take a peek, drool if you must and allow yourself to feel smug, knowing that your purchase will 100% be donated to the rescue

Mint shortbread melts-made famous by the now closed Manna Café in Madison, WI. They’re a shortbread base, topped with a swirl of white chocolate mint ganache, finished with a dark chocolate dip

Maldon sea salted milk chocolate chip cookies-need we say more?

Frosted pink almond cookies-forget the Lofthouse cookies, these are like nothing you’ve ever tasted. A soft sugar cookie base, frosted with an almond flavored pink American buttercream. Sweet, savory creamy, buttery

Chocolate cake sandwiches-my version of the Matilda chocolate cake (I.e. the BEST), a ganache/buttercream hybrid frosting will be sandwiched between layers of the Matilda cake. Easy to grab and eat on the go

Croissants-self explanatory, the real ones remember 😉

Orange chocolate dipped Palmiers-my blitz puff pastry, dusted with sugar, folded and then rolled into a heart shaped pastry. But we’re not done yet! They’ll be finished with an orange crystal dark chocolate dip

It’s been a hot minute, how y’all doin?

Join us at Yahooz Bar and Grill on January 31st for a fundraiser for Little Orphan Animal Rescue - Montello, WI! I’ve been volunteering at LOAR for about a year, and it’s one of my favorite places to be. The very important work done by this organization can’t be overstated. I could tell success story after success story, but luckily there’s been so many that I couldn’t say them all here. In order to make these happy stories continue, we need your help in raising funds.

Now, to bakery business: I’ll be offering sweet treats for sale at the fundraiser. All time and materials will be donated by us (I.e, me and my long suffering husband), all proceeds will go directly to LOAR.

I’ll be posting a menu next week, so get your money ready and join us for meat, raffles, baskets, treats and as always, amazing food and drinks from Jeffrey at Yahooz!

(Let’s see if I remember how to do this 😉)

An excellent announcement for my former massage therapy clients!

I had hopes we could convince this amazing licensed massage therapist to relocate back to Montello, and I’m thrilled to say she finally gave in and will be opening at Roots Wellness! This is truly a family affair, a mother daughter team running the show and making health and wellness local and accessible.

So get your calls in now for her opening date in May, as all of you know, a talented LMT’s appointments fill up fast! And this one is TALENTED.

Black beans are my current hyperfocus. So when I saw a cake recipe that used black beans in place of flour, I immediately burst into laughter and walked away. Walked it back a few moments later and really considered what could be.

Turns out, it was a slam dunk of a cake! Now don’t get snobby or scared on me this late in the game. You all know me, you all know if I thought it tasted off, or like a black bean in any way, I wouldn’t share it with you. You cannot taste any bean flavor. None. It’s literally a moist, delicious chocolate cake. I’ve never seen anything like this!

I’ve changed some ingredients and added some, purely for texture, moistness (sorry, sorry, gross word. I know) and flavor. If you have beef with light canola butter, use real butter or whatever oil you prefer. I happen to know butter and oil go hand in hand for the best crumb possible in cakes, but you do you. If you have beef with monkfruit or Splenda, use whatever sweetener you’d like. Please don’t ask me to speak on honey, agave or maple syrup substitutes. It will change the ratio of the other ingredients, and honestly it won’t have the classic chocolate cake flavor we’re after. So! Without further ado…
