Baking Soda and Baking Powder should be replaced every 6 months. Exposure to air and humidity causes these leaveners to lose their potency and the result will be a weak rise. In a pinch you can substitute baking powder for baking soda, but you will need to triple the amount. This swap will work but it will most likely change the consistency and possibly taste of your baked goods. Always best to follow your recipe! Happy baking!
