This week has been a busy one, and I just want to take a quick sec to say thank you. Thank you for the recommendations, the tags, the word-of-mouth, the messages, the phone calls, the reviews, the posts, your kindness, your patience…I see it, and I’m endlessly grateful for you💐 You are helping my business grow and together we are opening options for our gluten-free/special diet communities. That’s a big deal for us midwest folk. Bless y’all from the bottom of my heart💜

I dropped a fresh loaf of Gluten-Free Jalapeño Cheddar Focaccia off at Chef Sara’s Table in LaSalle earlier this week, so make sure you go get a sandwich and some of her delicious soup and/or salads😋 She also sells the focaccia in individual nice size square pieces for $3, so a great option if you want to try it, or have it to make sandwiches at home. I’ll be dropping off some gluten-free dairy-free Blueberry Streusel Muffins next week too, so don’t miss those!🫐

Hey gluten-free community!💜
It’s been an exciting week 🤗

As more of my breads and doughs appear in restaurants around the Illinois Valley, I want to share the special flour I use to make them.

Imported from Italy, Fioreglut is made by stripping the gluten from the wheat🌾
If you take flour and water and make a dough, and then cover that dough with water and knead, removing the water-soluble starches, you are left with a goopy glob of elastic insoluble gluten protein. Actually a pretty cool experiment if you test it with different flours. This leaves behind a gluten-free wheat starch, which is exactly what Fioreglut is.

I have worked with gluten-free products since 2008, and none have yielded this stellar of a result when it comes to breads. Truly a culinary gem. Thank you, Caputo!

You can enjoy a hot panini-pressed gluten-free sandwich on my GF Focaccia in Utica🍷

And now you can also enjoy a hot sandwich on my GF Jalapeño Cheddar focaccia at Chef Sara’s Table in LaSalle. For those who have asked, you can message me to order loaves, but as far as enjoying it hot out in the community, it will be exclusive to Chef Sara’s Table.
