We don't have a lot of large-scale baking equipment yet, so we're using every bowl we have in the kitchen!

We've got 15 loaves going here...and I'm seriously questioning my sanity with this big batch.

Struggling with knowing when your dough has finished bulk fermentation and is ready to shape for cold proof?

Look for these signs!

1️⃣ The dough has risen significantly - It should look noticeably lighter and increased in volume.
2️⃣ The dough is jiggly - the dough should move freely when you shake your bowl.
3️⃣ Look for a dome on the top - a slightly rounded surface is a great sign that fermentation is happening.
4️⃣ Bubbles throughout the dough - there should be plenty of bubbles throughout, not just at the top.
5️⃣ The dough pulls away from the side of the container - the dough should feel soft and elastic and pull away from the side without excessive sticking.

When a recipe gives you a specific time for bulk fermentation, use that as a guide not the rule. Temperature, humidity, starter strength, and even the flour you're using can all affect how quickly your dough ferments.
The best thing you can do is watch your dough. It will tell you when it's ready!

One of the things I love most about sourdough is how versatile it can be!

I fed my starter last night so I could bake bread today, but storms in our area interrupted those plans! By the time I got to my starter I had missed the peak. So, I switched gears and made discard English muffins instead!

I love how a few simple ingredients can make the tastiest treats!

These are great for busy mornings!
Throw one in the toaster and serve it with butter and jam.
Make breakfast sandwiches to freeze and use later.
Or, enjoy straight off the pan with a smear of butter and honey!

Just a little reminder that sourdough doesn't have to be complicated. Even when life gets busy or plans change, you can still make something delicious that your family will enjoy!

Recipe Thursday!

These Sourdough Discard Pancakes are one of my favorite ways to use up my extra discard. I usually make a double batch and freeze the extras. They're so easy to reheat on busy mornings. Just throw them in the toaster, microwave, or the oven for a few minutes and you have a quick ready to eat breakfast for those extra busy mornings.
They're soft, fluffy, and so delicious!

Sourdough Discard Pancakes

🥞 1/2 cup sourdough discard
🥞 2 cups flour
🥞 1 egg
🥞 4 tbsp melted butter
🥞 1 tsp baking soda
🥞 2 cups milk

Mix all ingredients until just combined. Cook on a lightly greased skillet or griddle over medium heat until bubbles form, then flip and cook until golden brown.

Freezer Tip: Let the pancakes cool completely, then freeze in a single layer before transferring to a freezer bag.
