A nom nommy nommy cake perfect for breakfast. Only additions made to the recipe was to add all the blueberries I could find (basically two cartons) and to add less of the topping. Very good for any time of the day but especially for breakfast with yogurt.

So this was supposed to be a Strawberry Rhubarb Pie. Sweet, tart, and yummy. But when I went to Publix to get the ingredients the rhubarb was no where to be found... but I already had all the other ingredients I needed in my basket. What to do what to do... Obviously I decided to make just a strawberry pie. It was delicious... and disappeared within two days.

The Very Yummiest Macaroons
For some reason this most recent batch of macaroons that I made where just delicious. They were crunchy on the outside and gooey on the inside. Pretty great. This is the link to the recipe I used though I have found it better to use only two egg whites. Otherwise they are to soupy.

I always wanted to make a layered cake because I heard they were the most challenging thing to make. That is definitely true! The cake its self is a "simple" sponge cake. I say "simple" because it took Mom 3 tries and close to 2 dozen eggs to make. The filling between the layers was lemon curd topped with raspberries. The vanilla bean buttercream frosting gave me some trouble because it started to separate as I was mixing it! We were out of the ingredients so I wasn't able to start over. I did, however, save the buttercream by adding a little confectioner sugar, to thicken, and salt, to offset the sweetness of the sugar. After mixing and mixing the frosting was perfect! And it tasted great! I actually ate so much of it while making it that I just couldn't eat any more and had to take it off my cake slices.

This cake was definitely an adventure. I would love to make it again because it is delicious!

So I am very very late in uploading these photos. Peach Dumplings are what I made two weeks ago. They are very delicious and perfect for breakfast. It is literally a whole half a peach stuffed with spices topped in butter surrounded by dough covered in melting butter hard sauce. Baking just can't get any better then this.

This is the Sweet Potato Pie I made last week. It was very easy to create since the dough,crust, didn't have to be rolled out. So last Monday I made Madeleines. The recipe is very simple, the only "hard" part being the fact that the batter has to set or three hours. Madeleines are basically little lemon cakes shaped like shells. They are very yummy. I want to make them again because the batter wasn't quite right after it set. Anyway, this is just a little extra treat from last week. This weeks baking experience will be up later :)

So this was my second attempt at making challah bread. The first one ended up being a mass so sticky that I couldn't even mold it into a ball. It became a huge round slab of bread which tasted pretty good. This Challah Bread dough was made by my Mom which, granted, is kind of cheating but I needed help in order to know what I had done wrong the first time. Probably not enough flour. This recipe made two amazing loaves and although they do not look like the picture yet I will keep working on the recipe as time goes on.

Here is a special Fourth of July treat: a lemon cake with the same whipped yogurt cream that was on the Pavlova topped with strawberries and blueberries. Of course it hasn't been a week but that doesn't matter. Two desserts in a week is always better then one. The cake recipe itself is called Nathan's Lemon Cake from myrecipes.com. I sure hope it tastes as delicious as it looks. Here is a before and after topping photo.
