I always wanted to make a layered cake because I heard they were the most challenging thing to make. That is definitely true! The cake its self is a "simple" sponge cake. I say "simple" because it took Mom 3 tries and close to 2 dozen eggs to make. The filling between the layers was lemon curd topped with raspberries. The vanilla bean buttercream frosting gave me some trouble because it started to separate as I was mixing it! We were out of the ingredients so I wasn't able to start over. I did, however, save the buttercream by adding a little confectioner sugar, to thicken, and salt, to offset the sweetness of the sugar. After mixing and mixing the frosting was perfect! And it tasted great! I actually ate so much of it while making it that I just couldn't eat any more and had to take it off my cake slices.
This cake was definitely an adventure. I would love to make it again because it is delicious!
