Stocked up you'll find in-house lemonades (ranging from blueberry thyme, raspberry rose, to a smoky chinese tea arnold palmer!) as well as non-alcoholic Saro Ciders locally made in Lincoln, and our most recent drop ... Peko Farms microgreens!

We're incredibly excited to not only be supporting a friend, but also an incredible product. You can find Pekos micros hitting most of our plates as garnishes, or as an addition of greens on some sandwiches!

As full as our summer is, we have made time for some time friends and family. We will be traveling at the end of the month to celebrate some of our sweet friends wedding vows in Utah - that being said, our made to order cafe will be closed JUNE: FIRST and SECOND as we make our way back home. But don't fret, Clean Slate Food Co. grab & go's will always be available - we appreciate you all!

We had an absolute blast at Long Walk Farms' first round of Battle of the Chefs' this past Sunday! Such a fun and unique event, and we couldn't have been happier to have been competing against Semo Pasta + Wine- what a truly talented team. Also, a nice shout out to Juan and Logan for crushing this event, we're incredibly lucky to have these boys in the All in Thyme family.

Our proteins were beef tongue and teres major, with required ingredients of asparagus and spring onion - for our first course we used The Miller Dohrmann Farm hand milled masa to create a lingua street taco. We braised the beef tongue in a smoky Chinese black tea sourced locally from The Tea Smith on 78th and some spices, topped with a charred spring onion and confit garlic salsa, pickled radish, and fresh picked cilantro (thanks Lone Tree Foods for all our veggies!) - with a vegan and vegetarian substitution of morel mushrooms from Flavor Country Farms.

For the second course, of course we served a steak sandwich! Hand made potato brioche buns, sous vides the teres major with garlic, thyme, and black peppercorns, topped with a spring onion and garlic chimichurri, our house made chili crisp, and vacuum sealed asparagus that we pressed with agave, and jalapeno pickling liquid.

Can't wait to see ya'll at the semi-finals on October 4th!

Good afternoon All in Thyme family! After a hell of a battle yesterday at Battle of the Chefs, this team is tired! We're going to finish up some prep projects here in the cafe, and then we'll be closing early for the day to catch up on a little rest. Thank you all for understanding and for all of the support and love!
