I’m sorry I am not very vocal on here. I do still bake, and love it dearly. Today my MiniMe and I are making apple fritters. As always, gluten and dairy free.

What’s your favorite cookie flavor? The holidays always have me itching to try new cookies!!

My go to is the biscotti recipe that I adapted from the recipe my mom has used since I was little. Hers calls for amaretto in the frosting, but I sub in orange flavoring and zest and I add dried cranberries to the cookies.

Post your favorites, and I’ll post a few as I try them out!

Spent all day in the kitchen today. I like to do as much in advance for Thanksgiving as possible. While waiting for my bread to rise, I whipped up a batch of cranberry orange muffins. (Probably one of my top 5 favorite flavors.)

This has me thinking ahead to cookie baking!! Anyone else?

Pumpkin Snickerdoodles

Cookies:
1 can of pumpkin
2/3 cup applesauce
2 tsp vanilla
1 cup sugar
1/2 cup maple syrup
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1 1/2 tsp baking powder
2 1/2 cups gf flour (my favorite is Bob’s red milk 1-for-1)

Coating:
1/2 cup sugar
1/2 tsp ginger
1 tsp cinnamon

Preheat oven to 350.

In a large bowl mix together all wet ingredients. In a medium bowl, sift together all dry ingredients. Gently fold dry mix into the wet, being extra careful not to overmix.

Blend coating ingredients into a small bowl.

Scoop rounded spoonful (I just use a regular ol’ spoon) of dough into your coating and toss. I always tap the spoon or fork I’m using on the side of the bowl to get the excess sugar off.

I pressed my cookies with a fork once they were on the cookie sheet, but if you prefer cakey cookies don’t press them.

Bake at 350 for 10-13 minutes.

Happy Halloween!

Hey friends. All of you know we have been trying for several years to get our doors open. THIS is something that could help greatly to reaching that goal. This would allow people like us to START SMALL and earn their way up, instead of investing everything up front to open a space not knowing if they could maintain it. We urge you to please take a look TODAY and consider helping small businesses get a leg up. Tomorrow is when the vote happens.

Original post from Edible Omaha:

Do you want a Cottage Food Law in Nebraska? If yes, this coming Tuesday, March 10, the Agriculture Committee of the Nebraska Legislature will vote whether to approve or deny LB558. This new Cottage Food bill would allow non-hazardous foods - that are currently sold at farmers' markets - to be sold through extended marketing avenues, including direct sales to consumers and through cooperatives.

In order for the committee members to understand how important this topic is for Nebraska's small local food producers to extend their marketing options to year round sales, please call the senators on the Ag Committee before Tuesday, March 10 and tell them your story.

Ag Committee Senators:

Jerry Johnson - (Wahoo/Ashland/Ceresco area): (402) 471-2719
Dave Bloomfield - (South Sioux City area): (402) 471-2716
Ernie Chambers - (North Omaha area): (402) 471-9723
Burk Harr - (Bensen area): (402) 471-2722
Mark Kolterman - (York/Seward area): (402) 471-2756
Tyson Larson - (Atkinson/O'Neill area): (402) 471-2801
Merv Riepe - (South Omaha area): (402) 471-2623
Ken Schilz - (Ogallala/Sidney area): (402) 471-2616

Hey all! I just looked at the weather, and it's going to rain tomorrow. Since our canopy decided to collapse in on me last market, we currently are with out protection from rain. Who all was going to see us at the Florence Mill Farmers Market tomorrow morning?
