Focaccia: savory, salty, absolutely irresistible!!

Our focaccia base is a "high hydration" dough made with our liquid sourdough starter. We bake it at high heat to get a bit of crispy char on the bottom, and the wet dough gives it those satisfying big bubbles on top. Each focaccia loaf is topped with our homemade crème fraîche, olive oil, and kosher salt. This classic combo is scrumptious just as it is, but if you like an extra savory treat, we also bake one topped with bacon and prosciutto. It can be frozen and reheated easily in a warm oven, but it's always best fresh! Perfect for breakfast, lunch, dinner, or snacking. Focaccia for the win!

"What's that bread and why does it look so square??"

Pain de Mie is a soft, white sandwich bread dating back to the 18th century. Originally baked in lidded pans to minimize crust development, its name in French literally means "bread of crumb" (crumb being the inside part of the loaf, as opposed to the crust). By the 19th century, the luxury Pullman railroad car had discovered the efficiency of the square lidded pans, and the bread and the pans became forever associated with the Pullman name (the pans are now known as "Pullman Pans").

Here at , our version of Pain de Mie includes sourdough starter and is made with organic bread flour. Like all of our breads from , it is fermented and proved over 2 days, which greatly enhances the flavor and the digestibility of the bread.

Pain de Mie is soft like Wonder Bread (but so much tastier), and is indeed wonderful for toast, sandwiches, grilled cheese, and especially French toast. Stop by and pick a loaf up. We think you'll love it! 🍞🥪🧡

Can't make it into the shop to peruse our book selection but want to support us? Need a specific title? We got you!

Check out our curated lists of books on our (print and e-books) and (audio) pages*. We love Bookshop.org and Libro.fm because they exist to support independent booksellers (like us!), encourage diversity in literature, and provide an alternative to the big tech options of the book world (Amazon and Audible).

Friends,

Many of you have stopped by in the last week and wondered why there was no fresh bread. Our fresh-frozen bread has sold out as of this past weekend as well. Unfortunately, we’re facing a baking facilities issue that requires time and work, and we’re unable to produce until that is complete. We share in the frustration of the disruption – please be patient with us and know that our bread will be back as soon as possible!

In the meantime, we want to keep feeding you, and greatly appreciate your continued support through our other offerings. We have lots of groceries, including newly added dairy products from , Wholesome Dairy, and , fresh produce from , and , cheeses, cheese curds, cheese spreads from , and meats from , Charleston Favorites grits, and more.

We also have a selection of NA beers, wines, and spirits, soft drinks, kombucha, local frozen pizzas from , delicious cured meats from Vermont Salumi, potato chips, , popcorn from , and more!

You can also support the shop and feed your brain by ordering books, ebooks and audiobooks through our bside bookshop.org & libro.fm pages (links in bio!). Be on the lookout for another post soon about this for more details.

Old Fort, we’re growing with you! 🥖✨

Things are moving at a "slow and steady" pace here at bside. We are so grateful for your patience as we get everything working. Here is the latest on what’s happening:

🗓 Wednesday Update: We’ve officially added Wednesdays to our schedule! While we don’t have fresh morning bread available on Wednesdays just yet, we expect our full mid-week morning lineup to be online in about two weeks as our new capacity kicks in.

🥖 Our Specialty: A quick reminder that we are first and foremost a sourdough bread bakery, not a pastry shop. However, we do have some small treats for those with a sweet tooth, including our Moravian sugar cake (for a limited time), take-and-bake scones, with more items joining the shelf soon.

🛒 Micro-Grocery & Drinks: Our mostly locally sourced grocery inventory is growing every week! We are especially excited about our expanding selection of NA (non-alcoholic) spirits, wines and craft beer offerings.

☕ Individual Serves: Looking for a snack to go with your morning brew? You can find both their excellent coffee, amazing baristas and our individual-serve items next door at Seeker Coffee starting at 7:30 am, Thursday–Sunday.

📚 Books & Music: Our curated book collection is always waiting for you to peruse, and we add more titles all the time as space allows. For the vinyl lovers, stay tuned- we're working on it! Meantime, our staff is always spinning platters all day.

🕒 7-Day Goal: We are working toward being open 7 days a week, 9 am–5 pm- we hope within the next couple of months.
