Introducing a new addition to my list of baked goodies! I am finally ready to start selling my Irish Soda Bread Scones. Everyone I have shared these with have loved them. My Irish-New Yorker friends have even given their seal of approval. Enjoy them warmed with a smear of Irish butter and your favorite jam. $2.50 each, with a minimum of 6 per order.

In non-baking news, the official announcement is out. My son, RJ, made the LABC-USA baseball team and will be representing our great country in Santo Domingo, DR, in August. It’s moments like these I know my grandfather and great grandpa are smiling down from Heaven. Man they would have loved this. RJ has both of their Louisville sluggers hanging above his bed, right next to Whit Merrifield’s autographed bat. I know they are both smiling down on him today and every time he touches the mound.

Pool season calls for the perfectly filled snackle box. Caprese on a stick, butterscotch/chocolate chip protein balls, fresh fruit, veggies, meat sticks and all the yummy treats. Plus a DELICIOUS coconut fruit drink from the aqua fresca stand by K-Macho. Add a little strawberry margarita to it and you have the perfect summer cocktail. Also, homemade garlic and lime tortilla chips.

Baseball season is in full swing in our house. RJ is 6’2 and 14 years old, which means he eats pretty much non-stop. I hate watching him snarf down a hot dog between games (trust me, he still enjoys them on occasion), and it gets expensive! So this season I have been packing him a snackle box filled with fresh fruit, salami sticks and my own protein balls. These protein balls have mini chocolate chips, mini butterscotch chips, protein powder, flaxseed, chia seeds, collagen powder, fiber powder, honey and organic peanut butter. His team mates also love them! The are the perfect snack to grab between games or to share while waiting for the lightning delay to be lifted.

I made Mary O’s Irish Soda Bread scones today. Mary O’s is a tiny little Irish bakery in NYC. They are only open four days a week and this is all they sell! They opened up the bakery in 2020 to help save their families Irish Pub. These scones are served with softened Kerry Gold Butter (the only kind I use), blackberry jam and a little course sea salt. This scone is buttery and just the perfect amount of salty too.

This is one of my families favorite things that I make. Pasteis de Nata (Portuguese egg custard tarts) is a delicious egg custard that has a light lemon and vanilla flavor and baked in a buttery flakey crust. Just perfection!

Good evening everyone! I know that I haven’t been baking as much as I used to. But between being a full time high school special ed teacher, prom sponsor, momma, wifey and the kids sports, life has been a little busy. I know we are only two weeks into the Lent season, but if you need help with your Easter baked goodies, I would love to help.

As you all know, my baking profits always go back to the community. But I am asking for a little help for my family, well my son, with my next few rounds of baking. RJ has made the 14u LABC-USA national baseball team and will be representing the USA in the Dominican Republic in August! Over 4,000 kids tried out nation wide for the 9u-18u teams and only 150 have been selected. We are beyond proud of his hard work to make this team, especially after suffering a broken shoulder about 2 years ago. Obviously, an opportunity like this comes with a large cost. But RJ asked if he could help to pay for some of it himself. He is going to be helping me bake and the profits will be going to help pay for this opportunity. He will also be mowing lawns, baby sitting and other jobs. Along with being able to play in the largest youth baseball tournament in Latin America, train with MLB players and NCAA coaching staff, he will be taking part in humanitarian work around Santo Domingo, DR with youth baseball. So again, if we can help make your Easter a little more delicious, please let me know. An Easter menu will be coming out closer to Easter. Much love to all of you!
