I offer home-baked bread on Tuesdays and Fridays, ready for pickup as early as 7:30am. Wicked Stepmother Black Bread!
With a name like that, you know there has to be a story behind today's mystery bread. The story comes from Ella Risbridger's Midnight Chicken (& Other Recipes Worth Living For), which you should definitely read for the recipes AND the hope. It is her closest approximation of the bread her (not actually wicked) stepmother used to make for her and her sisters, dark and sweet and full of good things. Rye, yes, but also carrots! And molasses, and brown sugar, and savory seeds, and coffee, and cocoa, converted to sourdough because I can. A beautiful, complex slice that she says is good with Eastern European soups and such, but BEST with butter and Marmite.

(Seriously. Read Ella's books. Preferably while eating something delicious, like this bread.)

PSA: this week is Paseo First Friday (when I can't take custom requests because I'm baking like a crazy person for Friday's bread table) and next week (June 8-12) I can't take orders because I'll be helping in my church's VBS, so TODAY is your opportunity to ask for any particular treats you might want. Order cutoff for Tuesday's bake is 3pm Monday.

I found a bounty of puffball mushrooms (the only wild mushroom so far that I'm 100% confident about ID-ing) on our walk, and my longsuffering husband went back two blocks to retrieve the plastic sack he'd noticed hanging from a tree to carry them home. 2.4 lbs of goodness. Now we have enough fajita-seasoned roasted mushrooms to enjoy in breakfast burritos and several other meals!

I painted this in my kitchen to remind me of two things: grace is important, and so is salt.

Have you ever tasted bread with no salt? No good.

Have you ever tasted food with too much salt? Also no good.

There must be a balance--in speech, in food, in life.

Grace to you. And also salt.

A garden fairy has been to the Aldi at 50th & May! Yesterday while grocery shopping, I noticed lettuce, green beans, squash, corn, some kind of brassica, and beets (or it might be chard), very intentionally growing in the little strip between the parking lot and street

Two things: 1) Who planted these? I asked the cashier and she was just as mystified and delighted as I.

And 2) HOW WONDERFUL!

100% Fresh-Milled Hard White Wheat Sourdough!
Today's mystery bread is a redemption story.

Does anybody remember the first time I tried to make a loaf of all fresh-milled flour? Spoiler alert: it was an epic fail. I didn't understand how fresh-milled flour acts SO differently than conventional, plus I inadvertently chose soft white wheat berries (which are great for cakes, not so much for bread😳)...and my flat, gummy loaf wouldn't even bake through. It was so bad I didn't try again for YEARS. I was scarred.

But today was the day I finally screwed up my courage and baked another 100% fresh-milled wheat sourdough. This time, knowledge and experience paid off. This loaf is simplicity itself--no fancy add-ins, just fresh-ground whole grain, water, and salt. The close, tender crumb will make you feel nourished and filled with just a swipe of butter.

(Full disclosure: I cannot offer fresh-milled loaves regularly, as my little home mill is not up to that kind of volume. Maybe one day I can save up for my dream mill from .stone.mills but today is not that day!)
