Popsicle Recipes Part 2

Kool-aid Pops

Mix 1 pkg of Kool-aid (or generic equivalent) with 1C sugar, 8 cold water, 1 box corresponding Jello gelatin flavor (optional).

Prepare the Kool-aid with the sugar and water, reserving 1C.
Heat 1C water and disolve the jello in the warm water. Add to yhe Kool-aid.

Pour the Kool-aid into popsicle bags or molds. Ensure bags are in an upright position to ensure they don't leak. If using mold ensure the popsicle sticks are centered and freeze for 6 hours to over night before serving.

Popsicle Recipes Part 1...

Strawberries & Cream

3C fresh or frozen strawberries
2C plain, strawberry yogurt
1C milk or heavy cream
1/4 to 1/2C sugar or honey

Mix all ingredients together in the base of your blender, or use an immersion blender. Blend until smooth. Add a little more milk or cream to make the mixture easy to pour.

You can freeze in popsicle mold bag or molds. Leave a little room for expansion. Just be sure to freeze the bags in an upright container to ensure they don't leak.

Notes:
☆You can Sub out any berries or peaches for the Strawberries, and flavor yogurt.
☆You can also cut the recipe in half
☆ Or make 1/2 one flavor & the other half another flavor. Like 1/2 with strawberries and the other with peaches.

I've had to have another surgery. This time for carpal tunnel release and trigger finger release in 4 out of 5 fingers on my left hand.

We're also dealing with some devastating news - my dad has terminal cancer.

I will be taking a break for a few more weeks as I heal and we come to terms with my dads diagnosis as we determine what the future looks like.

Blackberry Velvet Cupcakes. Decadent chocolate and blackberry sponge, with a blackberry jam filling and blackberry buttercream frosting. This is my favorite cupcake flavor.

These would be great for graduation parties or Mother's Day celebration. :)

The third try is the charm. Cake was decorated and ready to go on time.

It was a surprise thank you to the mechanic at the Odessa bus barn for passing the MODOT inspection and receiving a score of 100% for both the Odessa & Higginsville locations.

He said it tasted phenomenal, and that I nailed it. Makes the struggle worth it. :)

Well, it was a bad day for baking.

1st try at a large carrot cake, burned one layer.
2nd try apparently over filled the pan or didn't put enough flour in it - it over flowed - badly.
That's it for tonight.
I'll try it again in the morning.

In my last post I had a few pics of my products.

I'm working on cookies and more cupcakes tonight and tomorrow. Friday will be final labels and packaging.

They say payroll & taxes are the hardest part of a business. I say packaging is also a pretty tough thing to figure out. :) 😀

I plan on having pastel sugar cookies, red velvet sugar cookies, chocolate chip cookies and oatmeal cream sandwich cookies. Along with Pot of Gold (chocolate caramel) cupcakes and chocolate mint cupcakes. Lots to do. :)

Getting ready for the Anything Goes Event at the Youth Excited About Sports on Saturday and Sunday.

They will have a softball and baseball clinic outside along with a few trucks outside and about 65 vendors inside their huge gymnasium.
